Description

Cluster Beans Fry is a delicious and flavourful dish made with cluster beans, also known as gawar phali, or gawar ki sabzi, cooked with a blend of spices which adds a wonderful aroma and taste to the dish. It is a versatile dish that can be served as a side dish with rice or roti.

  • 2 cups cluster beans (cut into small pieces)
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to your spice preference)
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  • Wash the cluster beans thoroughly and trim the ends. Cut them into small pieces.
  • Heat oil in a pan or skillet over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds and let them crackle.
  • Add the cluster beans to the pan and sauté for about 5 minutes until they turn slightly tender.
  • Sprinkle turmeric powder, red chili powder, coriander powder, garam masala, and salt over the cluster beans. Mix well to coat the beans with the spices evenly.
  • Reduce the heat to low, cover the pan, and cook for another 10-15 minutes or until the cluster beans are completely cooked. Stir occasionally to prevent sticking or burning.
  • Once the cluster beans are cooked, remove the lid and increase the heat to medium-high. Stir-fry for an additional 2-3 minutes to give them a slightly crispy texture.
  • Garnish with fresh coriander leaves and remove from heat.
  • Transfer it to a serving dish and serve hot with rice or roti.
  • Cluster Beans Fry is ready to be served.

Notes

  • Make sure to trim the ends of the cluster beans before cooking to remove any tough parts.
  • If you prefer a spicier dish, you can increase the amount of red chili powder or add chopped green chilies.
  • Be careful not to overcook the cluster beans, as they can become mushy. They should be tender but still retain their shape and texture.
