The delicious, healthy steamed Idli Muffins taste almost like a pizza in a muffin form, flavoured with veggies, pizza seasonings, pizza sauce and chilli flakes.

Ingredients
- 1 cup idli batter
- 1 cup finely chopped veggies (onions, coloured capsicum, carrot, olives and jalapeños (optional)
- ¼ cup sweet corn kernels, boiled
- 1/3 cup mozzarella cheese, grated
- 1 teaspoon pizza sauce
- 1 teaspoon oregano
- 1 teaspoon chilli flakes
- Salt to taste
Instructions
To make Idli batter, go through with this recipe Instant suji Idli.
- In a mixing bowl, add idli batter, chopped veggies as per your choice, boiled sweetcorn, grated mozzarella cheese, pizza sauce, oregano, red chilli flakes and salt.
- Mix them well.
- Take muffin moulds, pour the batter into it and on top sprinkle few chopped veggies, oregano and chilli flakes.
- Steam the idli muffins for 10 minutes in a steamer, the first 5 minutes on high flame and then on low flame.
- Check it inserting a toothpick and if it comes out clean, your muffins are ready.
- Serve these warm Idli pizza muffins with a cup of tea or coffee.
Notes
- You can make these idli muffins low calorie by omitting cheese.
- The quantity and choice of veggies can be increased and decreased according to your taste
