Description
Rava Appe, also known as Rava Paniyaram or Sooji Appe, is a popular South Indian snack or breakfast dish. It originated in the southern states of India, particularly in Tamil Nadu and Karnataka. It can be enjoyed as a snack, breakfast item, or even as a light meal. It is commonly served with coconut chutney, tomato chutney, or any other chutney of choice. Here is the quick recipe:

Ingredients
- 1 cup fine Rava (Semolina)
- ½ cup Curd (Yogurt)
- ¼ cup Rice flour
- 1 small Onion, finely chopped
- 1 small Carrot, grated
- 2–3 Green Chilies, finely chopped
- 1 tablespoon Ginger, grated
- 2 tablespoons Coriander leaves, finely chopped
- Salt to taste
- ½ teaspoon Mustard seeds
- ½ teaspoon Cumin seeds
- ½ teaspoon Baking soda
- Oil for greasing and cooking
Instructions
- In a large mixing bowl, add rava, curd, and rice flour. Mix well and let it rest for 10-15 minutes.
- In a small pan, heat a tablespoon of oil. Add mustard seeds and cumin seeds. Let them crackle.
- Add chopped onions, grated carrot, green chilies, and grated ginger. Sauté until the onions turn translucent.
- Add the sautéed mixture to the rava batter. Mix well to combine.
- Add salt, chopped coriander leaves, and baking soda. Mix thoroughly to ensure all ingredients are evenly incorporated.
- Heat an appe pan and grease the moulds with oil.
- Pour a spoonful of batter into each mould, filling them about 3/4th full.
- Cook on medium heat for a few minutes until the bottom side turns golden brown. Drizzle a few drops of oil on top of each appe.
- Using a skewer or spoon, flip the appe and cook the other side until golden brown and crispy.
- Remove the cooked appe from the pan and transfer it to a plate. Repeat the process with the remaining batter.
- Serve hot with coconut chutney, tomato chutney, or any other chutney of your choice.
Notes
- You can add finely chopped vegetables like capsicum, spinach, or grated cabbage for additional flavour and nutrition.
- Adjust the consistency of the batter by adding water if it is too thick or curd if it is too thin.
- Make sure to cook the appe on medium heat to ensure they are cooked evenly and don’t burn.
- Grease the pan with oil before pouring the batter to prevent sticking and aid in easy flipping.
