Labneh with Fresh Fruits

Description

Labneh is a delicious traditional dip–tangy, thick, creamy yogurt cheese packed with nutritious fruits and spices, served as a dip with pita bread or as a spread in sandwiches. An easy-to-make recipe and very versatile!

Ingredients

For the Labneh –

  • 1 cup Greek yogurt/ hung curd
  • 1 teaspoon cardamom powder
  • 2 tablespoons coconut sugar
  • 2 tablespoons lemon juice
  • 3 tablespoons of water
  • Lemon zest

To serve with –

  • 1 firm mango (cut into chunks)
  • ½ cup diced plums
  • ½ cup diced peaches
  • 89 fresh cherries
  • 1 teaspoon star anise
  • 1 teaspoon fennel
  • 1 teaspoon cinnamon
  • 1 teaspoon black pepper
  • 1 teaspoon black cardamom

Instructions

For the Labneh

  • In a wide bowl, mix the Greek yogurt with coconut sugar, cardamom powder, lemon juice, and lemon zest.
  • Mix together well; add little water to achieve desired labneh consistency.
  • Take a large fine sieve lined with a muslin cloth and set that over a bowl. Transfer the mixture inside to the cloth, and tie it or seal it tightly with a rubber band.
  • Place heavyweight over the cloth and keep that in the fridge overnight or for up to 2 days.
  • The whey will separate from the solids, and you’ll get the creamy labneh dip. Once the labneh has drained and thickened, remove it from the fridge.

To serve with –

  • Heat a pan on flame. Add chopped fruits, nuts, and spices. Stew them on a slow simmer for 15 minutes. Set them aside.
  • Garnish the labneh with stewed fruits and serve immediately.

Notes

  • Always cook the stone fruit in a pan over a slow simmer for 15 minutes before adding to the labneh.
  • Make sure to use the sweeteners and flavorings, once the draining process is completed., otherwise, you will not get the flavor in the dessert.
  • It is best to prepare the labneh a day ahead. You can store this labneh in an airtight container in the fridge for up to 2 days.
  • If you are left with some labneh dip, then don’t waste it. Apply leftover on toast, add to smoothies, or use as a garnish on desserts or cakes instead of using cream cheese.
