Description
These homemade veggie burgers are incredibly delicious, flavorful, and full of veggies, and plenty of aromatic spices. This is a perfect substitute to a McDonald’s or KFC burger made with easily available ingredients.

For the Burger Patties
- 1 tablespoon of vegetable oil
- ½ cup onion, finely chopped
- 1 teaspoon ginger, finely chopped
- ½ cup beetroot, grated
- ½ cup carrot, grated
- ½ cup cabbage, shredded
- ¼ cup green beans, finely chopped
- ¼ cup sweet corn
- 2 teaspoons green chillies, finely chopped
- Salt to taste
- 2 teaspoons chaat masala
- ½ teaspoon garam masala powder
- ½ teaspoon black pepper powder
- ¼ cup green peas
- ½ cup paneer, shredded
- 1 cup potatoes, boiled & mashed
- 2 tablespoons cilantro/coriander, chopped
- 1 tablespoon mint, finely chopped
- 1 tablespoon fresh lemon juice
For the coating
- ½ cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon black pepper powder    Â
- 1½ cup breadcrumbs
- Vegetable oil for frying
Other Ingredients
- Whole wheat buns
- Coriander & mint green chutney
- Achari mayonnaise – 1 teaspoon of any kind of pickle, mix or blend with 2 tablespoons of mayo
- Lettuce leaves
- Sliced tomatoes
- Sliced onions
Instructions
For the Burger Patties
- Heat 1 tablespoon vegetable oil in a pan.
- Once the oil is hot enough, add the finely chopped onions and finely chopped ginger to the pan on high flame and saute for 2-3 minutes until the onion turns translucent and the raw aroma of ginger goes away.
- Then add grated carrot, shredded cabbage, beetroot, chopped green beans, sweet corn, green peas, and green chillies. Cook for 2-3 minutes.
- Now, add salt to taste, chaat masala, garam masala, and black pepper powder. Mix well with the rest of the mixture.
- Switch off the flame. Transfer the mixture to a large bowl and let the mixture cool down a bit.
- Add shredded paneer, boiled & mashed potatoes, coriander, mint, lemon juice, and ½ cup of breadcrumbs to the cooked veggies and mix very well. Set the veggie patties mixture aside.
Prepare the batter
- In a small bowl, add all-purpose flour, salt, and black pepper powder.
- Add little water and make a thick slurry without any lumps.
How to fry Veggie Patties
- Make ball-sized small patties as same as the size of the burger buns from the veggie mixture.Â
- Cover the veggie patties and keep them aside.
- Now dip the patties (cutlets) in the flour slurry evenly and pour the rest of the breadcrumbs onto the plate.
- Coat both sides of the cutlets with breadcrumbs.
- Similarly, prepare all the veg cutlets in the same manner and place them on a plate.
- In a frying pan, heat oil.
- Once the oil is hot enough, turn the flame on to medium heat.
- Drop 2-4 cutlets depending on the size of your pan, and fry until they turn lightly browned.
- Keep flipping the cutlets gently while frying to ensure even frying on all the sides. This will take about 10-12 minutes.
- Flip these patties gently a couple of times till the patties are even fried on all the sides and the outer layer becomes crisp and golden.
- Remove the veggie patties on a tissue-lined plate.
- Fry the remaining cutlet in the same manner.
- Keep aside.
Achari Mayonnaise
- In a small mixing bowl, add 2 tablespoons of mayonnaise with 1 teaspoon of any kind of pickle.
- Whisk the mixture very well and keep aside.
How to Assemble Veg Burger
- Slice the burger buns into equal halves.
- Place a pan, and heat some butter or oil.
- Toast the burger buns on a pan on medium flame.
- Spread prepared Achari mayonnaise on one side of the bun.
- Place lettuce on it.
- Add the prepared burger patty and top with a few slices of onion and tomato.
- Apply green chutney on the second halve of the bun and place it over the burger.
- Serve immediately with chips and salad.
Notes
- If you are using fresh sweet corn and green peas, cook them until they are slightly tender before adding them to the patty mixture.
- If the mixture looks soft or crumbles, then do add some more breadcrumbs and mix everything again very well.
- You can also use a lightly roasted chickpea flour, rice flour, all-purpose flour, crushed oats, corn flakes, vermicelli, and semolina (sooji or rava) for binding the patties.
- Instead of frying the patties, you can also bake them on a baking tray. Brush some oil over them. Place them in a preheated oven at 180 degrees Celsius (356 degrees Fahrenheit) and bake until golden and crisp.
- When toasting the buns, use oil instead of butter for a vegan option.
- Additionally, you can add some shredded cheese or cheese slices for a cheesy burger. You can also have a topping of jalapeños, guacamole, grated carrots, tomato ketchup or sauce, hummus, and mustard sauce to make it more unique.Â
