- 1 English cucumber sliced
- 1 avocado peeled, pitted and diced
- ½ cup kalamata olives sliced into thirds
- 4 oz (1 cup) feta cheese crumbled
For the dressing:
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 1 large garlic clove finely minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
To make this Greek salad
- Wash, chop and dry off the lettuce completely using a clean towel.
- In a large salad bowl, transfer the lettuce.
- Add the remaining ingredients to the same bowl: arrange the sliced red onion, sliced bell peppers, halved tomatoes, diced cucumber, diced avocado, kalamata olives, and feta cheese.
Make the dressing
- In a small bowl or mason jar, whisk together all Greek dressing ingredients olive oil, lemon juice, garlic, salt, and black pepper. Toss everything together, so that the flavors mix.
- Just before serving, drizzle half of the dressing over the salad, gently toss to coat. Serve the remaining on the side immediately.
Notes
- You’ll need to rinse the romaine lettuce in cold water to get the crisp texture, then dry the lettuce completely using a salad spinner or kitchen towel. Let it refrigerate before making the salad.
- The salad ingredients can be prepared a day before in advance and stored and refrigerated in an airtight container, only tomatoes and avocados are best added fresh.
- Keep the dressing for Greek salad simple and authentic. Add dressing just before serving. The salt in the dressing can lose freshness.
- Be careful not to add too much salt as feta cheese is already salty.
