Description

A fresh, classic Greek salad is one of the healthiest Mediterranean salad recipes with a homemade Greek Salad Dressing, naturally gluten-free, made using fresh raw veggies, some olives, and some feta cheese toss together in a lemon vinaigrette. This is a classic recipe everyone must try!

Ingredients

For the Salad:

  • 1 romaine lettuce head chopped
  • ½ medium red onion thinly sliced or diced
  • ½ green pepper (capsicum), deseeded and chopped
  • 1 cup cherry or grape tomatoes halved 
  • 1 English cucumber sliced
  • 1 avocado peeled, pitted and diced
  • ½ cup kalamata olives sliced into thirds
  • 4 oz (1 cup) feta cheese crumbled

For the dressing:

  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice 
  • 1 large garlic clove finely minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

To make this Greek salad

  • Wash, chop and dry off the lettuce completely using a clean towel.
  • In a large salad bowl, transfer the lettuce.
  • Add the remaining ingredients to the same bowl: arrange the sliced red onion, sliced bell peppers, halved tomatoes, diced cucumber, diced avocado, kalamata olives, and feta cheese.

Make the dressing

  • In a small bowl or mason jar, whisk together all Greek dressing ingredients olive oil, lemon juice, garlic, salt, and black pepper. Toss everything together, so that the flavors mix.
  • Just before serving, drizzle half of the dressing over the salad, gently toss to coat. Serve the remaining on the side immediately.

 


Notes

  • You’ll need to rinse the romaine lettuce in cold water to get the crisp texture, then dry the lettuce completely using a salad spinner or kitchen towel. Let it refrigerate before making the salad.
  • The salad ingredients can be prepared a day before in advance and stored and refrigerated in an airtight container, only tomatoes and avocados are best added fresh.
  • Keep the dressing for Greek salad simple and authentic. Add dressing just before serving. The salt in the dressing can lose freshness.
  • Be careful not to add too much salt as feta cheese is already salty.
