- 2 medium sized zucchinis, slice lengthwise about ¼ inch thick
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- 1 tablespoon red wine vinegar
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- Freshly ground black pepper
- Salt to taste
Instructions
- Preheat your grill to medium-high heat.
- Cut lengthwise into long thin slabs around 1/3 inch thick.
- In a large bowl, combine olive oil, red wine vinegar, parsley, basil, and garlic powder.
- Add the zucchini slice and lightly toss to coat. Sprinkle salt and freshly ground black pepper over.
- Lightly grease oil on grill. Place the zucchini on it. Cover and cook for 2 to 3 minutes from each side.
- When zucchini is tender, remove from heat. Do not overcook. If needed, add more salt and pepper.
- Serve warm.
