Description

Grilled zucchini is a quick and easy healthy summer recipe, perfect as a side dish. Here, Zucchini is grilled until it is soft and then drizzled with some fresh herbs like basil and parsley for a more vibrant flavor.

Ingredients

  • 2 medium sized zucchinis, slice lengthwise about ¼ inch thick
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Freshly ground black pepper 
  • Salt to taste

Instructions

  • Preheat your grill to medium-high heat. 
  • Cut lengthwise into long thin slabs around 1/3 inch thick.
  • In a large bowl, combine olive oil, red wine vinegar, parsley, basil, and garlic powder.
  • Add the zucchini slice and lightly toss to coat. Sprinkle salt and freshly ground black pepper over.
  • Lightly grease oil on grill. Place the zucchini on it. Cover and cook for 2 to 3 minutes from each side.
  • When zucchini is tender, remove from heat. Do not overcook. If needed, add more salt and pepper.
  • Serve warm.

  • These grilled zucchini recipe tastes best on its own!
  • You can serve it with any tasty dip or sauce over the top!
  • While making this recipe, always use medium-sized zucchinis because that works best for this recipe. 
  • This Grilled zucchini is best enjoyed warm right away from the grill.
  • Make sure your grill must be nice hot before you oil it.
  • Additionally, this also tastes good with a little squeeze of fresh lemon juice.
