Description

Leftover Roti Cutlets are savoury patties made by using leftover Indian flatbreads (rotis) mixed with mashed potatoes, vegetables, spices, and then shallow-fried until crispy and golden brown. Here is a delicious way to use leftover rotis in no time.

Ingredients

  • 34 chapati
  • 1 cup boiled and mashed potatoes
  • ¼ cup grated carrot
  • ¼ cup green peas
  • ¼ cup onions, finely chopped 
  • 2 green chillies, finely chopped 
  • 2 tablespoons coriander leaves, finely chopped
  • ½ teaspoon red chilli powder
  • ½ teaspoon carom seeds
  • Salt to taste
  • 12 teaspoon lemon juice
  • 2 tablespoons suji/rawa (for mixture) + 1 tablespoons (for coating)
  • Oil for shallow frying

Instructions

  • Start by breaking the leftover chapatis into small pieces and grind them to get a grainy mixture.
  • Transfer the mixture into a mixing bowl.
  • Add boiled mashed potatoes, onions, carrots, green peas, green chillies, coriander leaves, salt, red chilli, carom seeds, suji/rawa, and lemon juice into the grounded roti.
  • Mix everything well using your hands and knead it to form like dough and set aside for 10 minutes.
  • After 10 minutes, apply a little oil in your palm and take a portion of the mixture and shape it into round or oval patties or any desired shape as you like.
  • Heat some oil in a shallow pan or skillet over medium heat.
  • Once the oil is hot, carefully place the cutlets in the pan.
  • Fry and flip them over a couple of times till they are golden brown and crispy on both sides.
  • This usually takes about 3-4 minutes on each side.
  • Remove the cutlets from the pan and place them on a plate lined with paper towels to remove excess oil.
  • Serve the leftover chapati cutlets hot with your favourite chutney, ketchup, green chutney, or with tea.

Notes

  • If you have leftover rotis, ensure they are at room temperature. If they are cold, you can warm them up in a microwave or on a griddle. 
  • The ratio of rotis to potatoes can vary depending on the quantity you have, but a common ratio is roughly 2:1 (rotis to potatoes).
  • Adjust the spice level according to your preference.
  • Make sure that the mixture is well combined and the roti and potato blend together evenly.
  • You can make the patties as big or small as you like.
  • Alternatively, you can bake the cutlets in the oven instead of frying.
