Description

Mixed Veg Pickle or Gajar, Gobhi, Matar ka achar is a delicious, tangy mixed vegetable pickle that you must try this winter season. It tastes great with any Indian flatbread recipes, dal-rice combo, and as side to all meals too. Here, I am sharing a winter special mix vegetable pickle recipe in a few easy steps.

Ingredients

  • 1 kg cauliflower, cut into small florets
  • 45 carrots, peeled and cut into long cuts
  • 250 grams peas
  • 2025 garlic cloves, crushed
  • 3 cups mustard oil
  • 1 cup black mustard seeds (Rai), 
  • 2 tablespoon fennel seeds
  • 2 teaspoons fenugreek seeds
  • ½  teaspoon turmeric powder
  • 2 teaspoons red chilli powder
  • 3 teaspoons salt or to taste

Instructions

Preparation 

  • Wash and peel all the vegetables under running water to remove all the excess dirt. 
  • Separate the cauliflower into small florets. 
  • Cut the carrots in 2 inch long thin cuts.
  • Separate the peas.
  • Crush the garlic cloves with the back of a spoon or in a mortar pestle. Keep aside for later use.
  • Now, take enough water in a large vessel to a boil.
  • Once the water comes to a rolling boil, add the vegetables and blanch them for a minute.
  • Drain the water immediately and pat them dry on a clean or soft kitchen towel.
  • How to make Pickle Spice Mix
  • Take a grinder jar, grind the mustard seeds to make a coarse powder.
  • In a pan, heat the mustard oil very well.
  • Turn off the heat and let it cool down slightly.
  • Add mustard coarse powder, fennel seeds, fenugreek, turmeric powder, red chilli powder, and salt.
  • Mix them properly with oil.
  • When all the water has dried out from the vegetable, then put them into the spice mix.
  • Mix everything well till oil masala is properly coated with the vegetables .
  • Transfer the pickle to a clean and dry glass jar.
  • Cover it with a lid and keep it under sunlight for 5-6 days or until the vegetables are completely infused with the spices. 
  • This mixed Vegetable pickle is ready to be served for breakfast, lunch and even in dinner too.

Notes

  • Adjust the spices and vegetables proportion as per your taste. 
  • Make sure, the pickle must be covered with a layer of oil to increase the shelf life.
  • This pickle tastes best when it is fresh i.e. within a month. It can be stored for up to a  month or for more shelf life then you need to keep this pickle inside the fridge or put enough oil to completely submerge the pickle.
