What is Beetroot

Beetroot is a root vegetable also known as Beet, red beet, table beet or garden beet. Known as chukandar in Hindi is an excellent source of folic acid. It can be eaten raw or cooked. The green leaves of the beets are edible too and an excellent source of Iron and Calcium and other nutrients.

Beetroot Parathas are a mix of two of your favorite foods: Beetroot and Paratha.  It is a healthy flatbread recipe that is also great in taste made with beetroots chopped and pureed along with some spices to add flavor to the paratha. The paratha looks beautifully red in color and makes an amazing option for your breakfast meal. You can either top this mouth-watering dish with a fresh butter or desi ghee. It is an excellent way to get your kids to eat healthy food. 
This recipe is no onion – no garlic recipe. It taste better with pickle (achaar), curd (dahi) or any vegetable curry.

Beets are considered to be the healthiest and nutrient veggie associated with numerous health benefits. I always prefer to include beetroots in my diet when available. Here are some benefits:

Beetroots are an excellent source of folic acid, magnesium, phosphorous, vitamin C, iron, vitamin B 6, and dietary fiber.

It is a great immunity booster, a powerful antioxidant, and provides long-lasting energy.

It’s considered good for eyes, skin and is rich in iron content.

As beetroot is rich in fibre, it helps in digestion and prevents constipation.

Last, it also helps in lowering cholesterol levels. Beetroot juice is considered good for maintaining blood pressure levels in the body.

Ingredients

Beetroot: You need to cook the beetroot first and then puree it. I also use Instant pot to cook the beets. I prefer using boiled, peeled and grated beetroot for this recipe

Wheat flour: I used whole wheat flour for this paratha. You can also use multigrain flour too.

Ajwain (carrom seeds): Crush the ajwain before adding to the paratha. It gives excellent flavor.

Spices: red chili powder, turmeric powder, garam masala and amchur powder are used.

Mint (pudina): fresh mint finely chopped.

Ghee or oil: I always prefer adding ghee for parathas, it makes parathas more soft and delicious.

Serving suggestions

These parathas are best served hot topped with butter. For breakfast, pair them with curd (yogurt) along with pickle or green chutney or ketchup and some hot chai.

You can also serve these with curry or dal to make it a complete meal!
