Bengali Sweet Teler Pitha

Pithas

Teler Pitha or Pitha is one of the most popular recipe in West Bengal, served on the occasion called “Poush Parbon”. This is the most awaited day for all the Bengali sweet tooth lovers because various sweet delicacies (gourmet food) are prepared and among them Teler Pitha is a very simple and quick recipe. In general, Pithas are made with wheat flour or rice flour and filled inside with sweet or savory ingredients such as grated coconut, cashews, pistachios, sweet vegetables or fruits.  Usually, pithas contain sugar, jaggery, date juice or palm syrup. These sweet Pithas are often seasoned with cardamom. You can fry them in oil or ghee, roast slowly on fire, steamed or baked or sometimes rolled on a hot plate. They’re typically served during holidays and celebrations.

Teler Pitha

Serves: 10-12

Ingredients

  • 1 cup jaggery
  • 2 cups rice flour
  • ¼ cup all purpose flour (maida)
  • Oil or ghee to deep fry
  • ¾ cup sugar
  • ½ cup dates grated
  • For garnishing strawberry crushed

Instructions

  1. In a pan, add ½ cup water to jaggery, let it melt for 1-2 mins.

For Pitha dough:

  1. In a bowl, add rice flour, maida, grated dates, melted jaggery and lukewarm Mix all ingredients well and make a batter of it.
  2. Heat oil/ghee in a pan at medium heat.
  3. Pour a spoonful of batter in the oil and deep fry it till it becomes golden brown, flip it to cook on both sides. Take out on a kitchen towel and let it soak the excess oil, then place on a serving plate.
  4. Finally garnish pitha with strawberry crush.
  5. Enjoy!
