  • 3 green cardamoms coarsed (elaichi)
  • 2 tablespoons chopped cashews (optional)

Instructions

  1. Heat ½ cup ghee in a heavy bottom pan.
  2. As it melts, take out 2 ½ tablespoons ghee into a small bowl.
  3. Add besan to the pan, roast it on low flame until it well coated with the ghee.
  4. When it turns slightly aromatic and golden brown in colour, then add rest of the ghee.
  5. Keep stirring continuously on low flame otherwise besan can burn.
  6. After a while the besan starts to release the ghee and turns deep golden in colour and aromatic.
  7. Remove the pan quickly from the heat. Transfer the mixture to a large bowl. Allow it to cool slightly.
  8. Meanwhile, take sugar and cardamom pods in a blender jar. Blend it to make a fine powder. Alternatively, you can use tagar or bhoora.
  9. Once the besan is cooled (slightly warm) add powdered sugar.
  10. Mix well everything until sugar is well combined. Use your hands to knead the mixture.
  11. Do not add sugar in a hot mixture, as it will melt the sugar and makes mixture watery.
  12. Prepare a ball sized ladoos.
  13. Adjusting the amount of sugar as required.
  14. You can make about 8 ladoos. Store besan ladoo in a air tight jar and use within 3 weeks.

Tips

  •  Make sure to use coarse besan to get grainy ladoo like prepared by halwai.
  • Add nuts of your choice to get a crunchy tatste.
  • Add sugar only when the roasted besan cools down. If you add sugar in a hot mixture than it will melt and the mixture turns runny. This won’t be able to bind te mixture,
  • Additionally, use homemade ghee for better flavour.
