Creamy Spinach Soup

Ingredients

  • 1 large bunch Spinach
  • 1 tablespoon Butter
  • ½ tablespoon Garlic finely chopped
  • 1 tablespoon Refined flour (maida)
  • 1 cup Milk
  • Salt to taste
  • White pepper powder to taste
  • 1 tablespoon Fresh cream for drizzling

Instructions

  1. First, add spinach leaves in boiling water for 1 minute. Make sure to cut the stem and clean before you use. Allow to cool it for about 5 minutes or soak in ice cold water. Squeeze excess water and blend it. Add a little water and process until silky smooth puree.
  2. Heat butter in a non-stick pan.
  3. Add garlic and refined flour, stir till it turns golden brown.
  4. Add spinach puree and mix well.
  5. Add water as required and mix well.
  6. Also add milk and salt and give a good mix.
  7. Add white pepper powder and give a quick stir.
  8. Now, give the puree to a boil and check the consistency.
  9. Then pour the soup in serving bowl and drizzle some fresh cream on top.
  10. Finally, enjoy the piping hot creamy spinach soup.

Tips-

  • Do not over boil Spinach as they will loose color and nutritional value.
  • Add more cream to make the soup creamy.
  • Blend to smooth puree once they are cooled completely.
