Ingredients

  • 1 cup coriander leaves (dhaniya)
  • ½ cup mint leaves (pudina)
  • 3 cloves garlic
  • ½ inch ginger
  • 2 tablespoon roasted peanuts
  • 3 green chillis
  • ½ teaspoon cumin (jeera powder)
  • 1 teaspoon chaat masala
  • ½ teaspoon sugar
  • Salt as needed
  • A pinch of asafetida (hing)
  • ½ cup water
  • 1 tablespoon lemon juice

Instructions

  1. First, pluck coriander with tender stalks and mint leaves.
  2. Wash both well separately for 2 or 3 times.
  3. Then drain them well.
  4. Add all the ingredients coriander leaves, mint leaves, 3 cloves garlic, ½ inch ginger, 3 green chillies, additionally add 2 tablespoons roasted peanuts, cumin powder, chaat masala, sugar, salt to taste and a pinch of hing to a blender jar.
  5. Blend it to make smooth chutney by adding ½ cup water.
  6. Transfer this smooth chutney into a bowl and add 1 tablespoon of lemon juice.
  7. Refrigerate and use whenever needed.
  8. Store this in a clean dry airtight glass jar in refrigerator for 3-4 days.
  9. Finally, green chutney is ready to use for sandwich or chaats.

Tips-

  • Roasted peanuts help to blend the chutney to thick and smooth paste.
  • You can increase the amount of green chillies based on spice level.
