Suji idli is one of the most popular recipes of South Indian cuisine. It is simple and quick breakfast or teatime snack recipe. This easy-to-make recipe is prepared with very simple ingredients like as suji, dahi, baking soda,  and few curry leaves. It can be prepared in breakfast, lunch or dinner and also can be packed for lunch boxes too. The idlis perfectly goes well with a hot bowl of sambar and coconut chutney. Idlis can also be serve with tomato ketchup or with any other chutney. It is a perfect healthy option for health conscious people.

This instant suji idli is plain without any seasoning. It takes less time to prepare. This instant breakfast or dinner can be ready in no time. This plain suji idli is a great option for bachelors and working women, who are always in a hurry. It is easy for them to make food quickly. For this recipe, you can use roasted suji as well as unroasted suji. Both gives great results. This idli stays soft and spongy for few hours. So you can even pick it up for your lunch box if you like. A mixed vegetable sambar or tomato chutney pair best this suji idli and makes it a wholesome, filling breakfast or dinner.

Instant Suji Idli

Ingredients

  • 1 cup coarse semolina (suji or rava)
  • 1 cup yogurt (curd or dahi)
  • ¾ teaspoon salt
  • ½ cup water as needed
  • ½ teaspoon baking soda
  • 1 tablespoon oil
  • Few curry leaves

Instructions

Heat the oil in a pan, add semolina and mix well. Fry for 2 minutes on low heat until the semolina starts to change color. Remove from the heat. Mix well. Let it cool down completely. In a large mixing bowl, combine the yogurt with semolina. Mix well with a spoon or wire whisk. Add salt, then add baking soda. Whisk well. Keep it aside for 10 minutes. Take the idli mold and grease every mold with little bit oil. Pour 2 tablespoons of the batter into each mold. If you want, you can put a broken cashew or curry leaves on top (optional). In a large deep pan or cooker, pour a cup of water. Let it boil. When water starts boiling reduce the flame. Set the the idli mold into boiled water. Turn the heat to medium. Cover the pot with a lid. Steam for 15 minutes on medium flame. Put a knife in the idli to check, if the knife comes out clean then the idli is ready. Remove from the heat. Take out the idli with the help of a knife. Cover them before serving on plate. To serve, steam for 3-4 minutes until it is properly heated. Serve hot with sambar and coconut chutney.
