Kaju Katli Recipe

Kaju Katli is one of the most popular sweets in North India. During Diwali festival, this popular sweet is probably the best gifted one to relatives and friends. This sweet is thin, smooth, melt in the mouth with cashew goodness. Basically, kaju katli is to become thin, not thick like burfi. The word ‘katli’ refers to thin slices.
This recipe requires few basic ingredients- cashews, sugar and water. Also, I added a mild flavor of cardamom powder with cashew powder. I used little bit of ghee to roll the dough evenly on a tray.
According to me this homemade version of kaju katli is so much better than we bought from halwai shop.
Serve this sweet with your relatives and friends on festive occasions.

Description

Kaju Katli is one of the most popular and loved Indian dessert throughout India made with powdered cashews. This homemade recipe of kaju katli is like the ones we get from sweet shop. During the Diwali festival or any festive gathering, a box of Kaju katli is considered one of the most expensive gift to give family, friends and loved ones.

Ingredients

  • 1 cup (150 grams) raw unsalted cashews (kaju)
  • ½ cup regular white sugar 
  • ¼ cup water
  • A pinch of cardamom powder (elaichi)
  • 1 teaspoon ghee
  • For garnishing edible silver vark (chandi ka vark) optional

Instructions

  • In a grinder jar, put raw cashews nuts into it. Grind to make a smooth fine powder.
  • Keep this aside.
  • In a pan, add sugar and water. Place it on a medium flame. Keep stirring well to form the syrup until 1 string consistency.
  • Now sieve the ground cashew powder and cardamom powder into the sugar syrup on low heat.
  • Continue stirring until the mixture starts releasing from the pan.
  • Then add a teaspoon of ghee. Once the ghee melts completely and the katli mixture formed leaving the pan, turn off the flame.
  • Apply ghee on to a tray and on your palms. Knead the dough for 30 seconds till you get smooth dough.
  • Transfer the cashew dough on a tray evenly, using a rolling pin. Adjust the thickness as per your choice.
  • Once rolled on all sides, decorate using silver vark all over. 
  • Now cut the dough into diamond shape, first vertically and then horizontally.
  • Serve kaju kartli separately and enjoy!
  • Store the kaju katli in the fridge for up to a week. 

Notes

  • While grinding cashews, always remember to make a smooth powder. Do not over grind it else cashews will release oil and formed to cashew butter.
  • It is best to use parchment sheet to prevent the stickiness of the dough.
  • If you like the rose flavor in Kaju katli then adds it instead of cardamom powder.
  • You can store Kaju katli in an airtight container in the refrigerator. It will stay fresh and good in taste for up to 3 weeks.
