Description

Moong dal instant dosa is a savory Indian pancake made with green moong dal (split green gram). It’s a quick and easy dish to make, perfect for breakfast or as a nutrition meal, packed with protein and flavor. Here’s a simple recipe to make moong dal instant dosa:

Ingredients

  • 1 cup green moong dal (split green gram)
  • 12 green chilies
  • ½ inch ginger (adrak)
  • Salt to taste
  • 2 tablespoons chopped coriander leaves
  • Pinch of hing (asafoetida)
  • ½ tablespoon red chilli powder
  • 1 teaspoon red chilli flakes (optional)
  • Water as needed
  • Oil for cooking

Instructions

  • Rinse the moong dal thoroughly and soak it in warm water for about 10 minutes. This helps in softening the dal and makes it easier to grind.
  • After 10 minutes, strain the water and transfer the dal to a blender jar. 
  • Add green chilies, ginger and salt.
  • Add little water and blend together to make a smooth batter. 
  • Add water gradually as needed to achieve a dripping consistency similar to pancake batter. The batter should not be too thick or too thin.
  • Heat a non-stick skillet or dosa pan over medium heat. Once hot, grease it with a little oil.
  • Carefully sprinkle a few drops of water and wipe it with a kitchen towel. 
  • Turn off the flame and then start spreading a ladleful of the dosa batter onto the center of the pan in a circular motion to form a thin layer.
  • Drizzle a little oil or ghee around the edges of the dosa and cook it until the bottom turns golden and crisp.
  • Once cooked, transfer the dosa to a plate and serve hot with your favorite chutney, sambar, or with yogurt.
  • Repeat the process with the remaining batter to make more dosas.
  • Enjoy.

  • It’s essential to soak the moong dal for at least 10 minutes before making the dosa. This helps soften the dal and makes it easier to grind into a smooth batter. If you have enough time, then you can soak it for 1-2 hours.
  • It is important to achieve the right consistency of the batter, similar to like pancake batter, neither too thick nor too thin. Add water gradually while grinding to achieve the desired consistency.
  • Blend the soaked moong dal until you get smooth batter with no lumps. This ensures that the dosa cooks evenly.
  • You can add finely chopped onions, any other herbs and spices of your choice. This enhances the flavor of the dosa.
  • Make sure the dosa pan is properly heated before pouring the batter . Lightly grease the pan with oil or ghee and wipe off any excess with a paper towel. This prevents the dosa from sticking to the pan.
  • Spread the dosa batter in a circular motion starting from the center and working your way outwards. This helps in achieving a thin and even layer of dosa.
  • Cook the dosa on medium heat until the bottom turns golden brown and crisp. Always use a non-stick skillet or dosa pan to make the dosa. A well-seasoned cast iron tawa also works well. Avoid using utensils that are too thick, as they may hinder the spreading of the batter.
