Ragi porridge or ragi malt is a liquid healthy meal that is widely popular across India. Ragi porridge and ragi malt are the same things known with different names. It is either cooked with water or with milk, a completely healthy and nutritious red millet dish for growing babies and adults alike. A miracle food for people of all ages.

This ragi porridge can be given to your babies as early as you start them on solids. Ragi is a superfood with immense health benefits and a good source of calcium, iron, fiber & vitamin D.  So, it is one of the healthiest foods to include in your regular diet.

In southern parts of India, it is also known as red millet or finger millet and is much consumed there. It does not have a taste of its own. It is a wholesome breakfast that can be made in two ways – Sweet and Savory.

In this recipe, I have shared a sweet version of ragi porridge with jaggery and water. But there are many other versions of ragi porridge as the popular variants are the savory version made with salt and a bit of spice like pepper. We can use ragi in so many ways making like ragi dosa, ragi ladoo, ragi murukku, ragi idli, etc.

Ingredients

Ragi flour – This ragi malt recipe is made with ragi flour. It is very easy to make and takes less than 15 minutes. You can use both ragi flour and sprouted ragi flour to make this ragi malt recipe.

Jaggery is used to sweeten the drink, but if you don’t want to add this, you can replace it with brown sugar or any other sweetener. Traditionally, jaggery is used to make this malt.

Water is used to make thin ragi malt, while milk makes the ragi malt thick and heavy. This ragi malt is a vegan version. If you prefer, you can add half water or half milk or only milk.

You can add nuts, dry fruits, and flavorings of your choice. For flavoring, I always add cardamom powder and garnish it with chopped cashews.

How to make Vegan Ragi Porridge?

It is very quick and easy to make vegan ragi malt. You can either use just water or replace dairy milk with apple juice, almond milk, or coconut milk. As with any non-dairy milk, simmer it gently and do not boil.

Serving Suggestions

You can serve ragi porridge as a health drink for kids and can even give to adults in place of coffee or tea. It has to be served immediately as it thickens quickly.

Ingredients

For Ragi Slurry

  • 4 tablespoons ragi flour 
  • 2 cups water

Other Ingredients

  • 2 tablespoons jaggery powder or as needed
  • ¼ teaspoon cardamom powder
  • 1 tablespoon chopped cashews or a mix of dry nuts (optional).

Instructions

  • In a mixing bowl, take ragi flour.
  • Then add 2 cups of water into the ragi flour.
  • Mix well using a wired whisk or a spoon to avoid the formation of lumps. There should be no lumps.
  • Put this mixture into the pan and place it on heat. Start cooking this mixture slowly at medium flame.
  • Keep on stirring for about 3-4 minutes until the ragi porridge thickens and turns to a glossy brown colour.
  • Turn off the flame.
  • Add jaggery or sugar and then add cardamom powder.
  • Mix the ragi porridge very well until the jaggery completely dissolves. In case the ragi porridge becomes thick then add some more water.
  • Transfer it to a serving bowl.
  • Garnish it with chopped cashews.
  • Ragi porridge is ready to serve.
  • Serve it hot or at room temperature.

Notes

  • Replace water with milk for a more healthy option or you can add half-half of water or milk or only milk in the malt.
  • I suggest, it is better to make the porridge without milk. The reason being, adding milk reduces the iron content of ragi.
  • According to your requirement, you can adjust its thickness by adding or reducing the amount of water.
  • Both ragi flour and sprouted ragi flour can be used to prepare this dish.
  • Additionally, you can add various nuts, dry fruits and flavorings of your choice like dates, raisins for garnishing; these not only sweeten the porridge but also adds nutrients value.
