Ingredients

  • ½ packet thin brown vermicelli (sevaiyaan)
  • 1000 ml around 1 litre milk
  • 2 tablespoon ghee
  • 100 grams sugar
  • ½ teaspoon cardamom powder
  • 1 tablespoon grated dry coconut
  • ½ cup raisins
  • ½ cup almonds chopped

Instructions

To make Shahi Meethi Sevaiyaan

  1. Add milk in a pan and boil it on a low flame. Keep boiling the milk until it thicken. Keep stirring in between.
  2. Add sugar into the milk and let it dissolve.
  3. Now, heat the ghee in a deep bottomed pan. Roast the almonds, raisins and grated coconut in it one by one till turn light brown. Keep the fried nuts aside. Remove then to a bowl.
  4. Fry the sevaiyaan in the same ghee, roast them till fragrant and change the color. Keep stirring to prevent the vermicelli from getting burned.
  5. Add cardamom powder into the boiled milk. Mix it well.
  6. Add the boiled milk slowly to the sevaiyaan. Stir it till well combined.
  7. Add fried mixture of almonds, raisin and desiccated coconut in the sevaiyaan and cook it until milk is soaked. Keep the flame low. Once done, remove from heat and keep aside.
  8. To garnish, add remaining fried almonds and mixture of raisins and coconut on top of it.
  9. Serve warm or chilled as per your choice.
