Spanish Omelette

Ingredients

  • 5 Eggs
  • 1 medium onion cut into thin slices
  • 2 medium potatoes peeled and sliced
  • 1 tablespoon Oil
  • Salt to taste

Instructions

  1. First, whisk the eggs in a large jug or bowl.
  2. Preheat oven to 180º C.
  3. Heat oil in an oven proof non-stick pan over medium heat. Once the oil has heated, add onion cook until lightly browned.
  4. Add potatoes and salt, stirring gently about 1-2 minutes until the potatoes are tender.
  5. Pour the beaten eggs into the pan to cover the potato and onion and spread well.
  6. Remove from the oven and let it cool.
  7. Put pan in the preheated oven and bake till the eggs are fully baked.
  8. Cut into slice and serve hot.
