Vegetable Pulao

This Tawa pulao is a most famous Mumbai street food that is mostly available in most chaat shops or local pav bhaji counters. This pulao is cooked on the same tawa on which they also cook pav bhaji. This recipe is super easy to make, if you have leftover rice. I usually make this pulao with leftover rice for a quick meal. The addition of pav bhaji masala gives it a very typical street style flavor that I must-add in this recipe.

Tawa basically -a flat griddle or a pan on which we usually make chapatis or use for shallow frying. If you don’t have a large enough tawa, you can definitely make this recipe in a kadai. To make this pulao recipe, you need long grain rice, veggies like peas, carrots, and beans etc. sauteed together with pav bhaji masala and other spicy herbs. You just need to steam or boil rice and cook the veggies before adding it to the tawa. Make sure that the rice not to be overcooked as they will cook again with the veggies.

This pulao is best served hot with raita, yogurt, roasted papad and any pickle by the side.

Description

Tawa Pulao is one of the famous street food of Mumbai, made on a large tawa or griddle using cooked rice, mixed vegetables and Pav Bhaji masala powder. This tawa pulao tastes delicious, which is easy to make without much effort.

Ingredients

  • 3 cups basmati rice boiled 
  • 1 cup onions chopped 
  • 2 cups tomatoes chopped 
  • ½ cup carrots chopped 
  • ½ cup potatoes chopped  
  • ½ cup green Peas 
  • ½ cup French beans (green beans) chopped 
  • ½ cup bell pepper (capsicum) chopped 
  • 2 green chillies
  • 1 tablespoon ginger garlic paste 
  •  2 teaspoons lemon juice
  • 1 teaspoon cumin seeds (jeera)
  •  ½ teaspoon turmeric powder
  • ½  teaspoon red chilly powder 
  • 34 tablespoons pav bhaji masala
  •  3 tablespoons fine chopped coriander leaves
  • 4 tablespoons butter/ghee,
  •  2 teaspoons oil
  • Salt as per taste

Instructions

  • In a pan or wok or tawa, add little oil and butter to melt over medium flame.
  • Now add cumin seeds and saute till they begin to crackle.
  • Add fine chopped onions, fry them till turns little pink or translucent.
  • Then add chopped beans and chopped capsicum. Saute for 2 mins.
  • Add little salt and cook everything well for few more minutes.
  • When veggies are almost half cooked, add ginger garlic paste and saute till the raw aroma goes away. After a minute, the oil starts releasing from the veggies. Then add turmeric powder and mix it well.
  • Add fine chopped tomatoes. Mix well and cook till tomatoes turn soft or mushy.
  • Add green chillies, red chilly powder and pavbhaji masala. 
  • Mix it again. Now add the chopped potato, carrot and peas. Sprinkle salt and stir well. Cook for 5-6 minutes.
  • Add the cooked basmati rice and gently mix the veggies with the rice.
  • Garnish with coriander leaves, squeeze some lemon juice. Add some more butter to this tawa pulao.
  • Tawa pulao is ready to serve.
  • Serve tawa pulao hot with raita, yogurt accompanied with papad and pickle.

Notes

  • Do not add too much salt, If you are using salted butter.
  • This recipe can also be made in a frying pan or even in a kadai (wok).
  • Rice should not be overcooked as we are going to cook them with veggies and masala.
  • The veggies should not be mushy like pav bhaji they should only be tender.
  • You can adjust the spice level according to your taste.
