It is made with boiled potato chunks, which are then deep-fried until crisp and golden in color. Aloo chaat recipe has shallow fried crispy potatoes which are then topped with masalas, salt, spices along with tamarind and coriander chutney and garnished with fresh coriander leaves and additionally, fresh-cut round onion pieces can be added too.

One of the key ingredients in this recipe is the chaat masala which is a mix of different spices like mango powder, cumin, ginger, etc. Roasted cumin powder and dried mint powder also impart a fresh and mouthwatering flavor to this dish.

Variations

In different regions of India, you may find many variations in making this aloo chaat, but in all varieties, fried aloo pieces are the key ingredient, served with different chutney toppings and other chaat ingredients. Most people serve it as simple by mixing all the ingredients except the onion, curd, and sev. In some regions of India, people use boiled potatoes along with chana (chickpeas) to make this chaat.

This recipe which is popular in North India uses raw potato pieces which are then shallow fried.

Ingredients

  • 34 medium sized potatoes cubed
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon chaat masala
  • ½ teaspoon mint powder (optional)
  • Salt to taste
  • 2 teaspoons sweet tamarind chutney
  • 2 teaspoons green coriander chutney
  • ¼ cup coriander leaves chopped
  • 34 tablespoons oil

Instructions

  • Wash and peel the potatoes and then dice them into 1-inch size cubes.
  • In a pan, heat oil on medium flame.
  • Next add the potato cubes.
  • Fry the potato cubes until they turn golden and little crisp from all sides.
  • Turn of the flame.
  • Now add salt to taste, red chili powder, chaat masala, roasted cumin powder, and mint powder to the fried potatoes.
  • Additionally add green chutney and sweet tamarind chutney, so that the salt, spices, and chutney get coated over fried potatoes.
  • Gently toss and mix everything together without breaking the potato cubes. 
  • Transfer aloo chaat to a serving bowl.      
  • Add some chopped coriander on top.
  • Aloo chaat is ready to serve.
  • Serve immediately.

Notes

  • Make sure, while adding the spices and chutneys to the fried potatoes, gently toss them together without breaking the potato cubes.
  • While serving, you can add chopped onion, some sev (gram flour vermicelli) on top. It is optional.
  • According to taste preference, adjust the spice powders and salt.
  • Instead of frying, you can even air-fry or bake the potatoes.
