Instructions

  1. Preheat the oven to 180C. Line two baking sheets with parchment paper. Set aside.
  2. In a large bowl, beat the butter with brown sugar, coconut sugar and egg using hand blender or in a food processor and process until creamy and fluffy. Continue to beat until well combined.
  3. Add the whole-wheat flour and cocoa powder together until well combined.
  4. Slowly add the flour mixture into the buttery sugar mixture.
  5. Add the chocolate chips. Stir to combine well. Roll the dough into walnut or lemon sized ball pieces, depending on how large you want each cookie.
  6. Place on the baking sheet about 3cm apart.
  7. Place it on the prepared trays, about 3cm apart. You can flatten them slightly.
  8. Place into the oven and bake for 10-12 minutes.
  9. Take out the cookies from oven. Keep aside on trays to cool completely.
  10. Now take a glass bowl to melt the white chocolate into the microwave for 10 seconds.
  11. Pour the melted white chocolate into a small zip lock bag.
  12. Cut a small hole in the corner of the bag and drizzle the white chocolate over each cookie.
  13. Refrigerate until chocolate is set, about 10 minutes
  14. Serve with ice cold milk. Enjoy.

Tips – Always remember to space them evenly on the baking tray because the dough will spread slightly during baking. Be careful not to overcook the white chocolate! You can keep them in an airtight jar for a couple of days.
