Thai Pineapple Fried Rice

Thai pineapple fried rice is one of popular and my favorite recipe. It is easy to make, healthy, and so yummy. Moreover, it’s so colorful! Eating this pineapple fried rice in Thai style will definitely remind you of Thailand if you have ever visited it.

How to Make Pineapple Fried Rice 

The taste of pineapple adds juicy sweetness to these fried rice. The taste of curry powder and soy sauce makes it spicy. Bell peppers, peas and carrots give it some nice crunch and color. Green onions and fresh cilantro leaves give it even more flavor and freshness. It is very easy to make with leftover rice, it works best with cold, leftover rice because it’s drier than freshly cooked and it will keep a firmer texture. You can cook it the night before and refrigerate overnight (or at least 6-8 hours). It will still be tasty if you haven’t chilled the rice, but the texture will be a lot softer than typical fried rice.

This recipe is veg and gluten free, if you use tamarind instead of soy sauce. It is also light and healthy, so delicious – I just love its sweet and tangy taste! It takes only 10 minutes to make. It can be serve as the main course or as a beautiful side dish to any meal.

You don’t need any fancy or hard to find ingredient to make this pineapple fried rice. You can easily find everything in any regular grocery store.

Thai Pineapple Fried Rice

Ingredients

  • 1 cup Basmati rice (cooked) equals 3 cups
  • 1 onion, chopped
  • 2 carrots, cut into thin stripes
  • 1/2 red bell pepper, cut into thin stripes
  • 1/2 cup frozen peas
  • 1 cup pineapple, cut into small cubes
  • 2 green onions cut into rings
  • 3 cloves garlic, chopped
  • 1 tablespoon oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup cashews
  • 1 tablespoon soy sauce, if not use tamarind
  • 1 tablespoon curry powder
  • Red pepper flakes (optional)
  • Fresh cilantro or corriander (optional)

Instructions

  1. This Thai pineapple fried rice is best to make with leftover rice a day before. So cook the rice as per the instructions on the package and keep it in an air-tight container and store it in the fridge until you use cooked rice.
  2. Now cook the frozen peas for about 7 minutes.
  3. To make it, heat the oil in a large pan, fry the onion for about 3 minutes till it turns golden brown.
  4. Then add garlic, carrots, and bell peppers. Keep stirring for 3 minutes.
  5. Then add cooked rice and season curry powder and soy sauce, mix well,
  6. Now, add chopped pineapple, peas, green onions, and cashews.
  7. Season with salt, pepper and red chili flakes, stir until well mixed.
  8. Garnish with fresh cilantro or coriander leaves and more green onions on top.
  9. Serve it. Let’s enjoy!

Note- Make sure the pineapple you use for this recipe is ripe. For true restaurant quality, you can serve it in a carved-out pineapple, which is quite easy and fun.
