Corn Fritters, a sweet, savory, slightly crisp small fried cakes made of corn. The corn and other additional ingredients like chopped veggies of your choice added to make a thick batter. These fritters are fried in a less quantity of oil, this makes these fritters super crispy from outside and soft from inside, loaded with scallions and serve these fritters plain or with a spicy salsa, sour cream or garlic aioli to highlight their sweetness. But here I am making this recipe quite simple with no use of vegetables. There are variations to make these fritters all over India. I think through this recipe, you can make something quick and easy snack especially when you are hungry or craving to eat.

This is the great way to use fresh or frozen sweet corn, when you are looking to make something new out of it.
These corn fritters are the perfect way to enjoy the summer season. I love to make corn fritters made with using corn. However, fresh corn is not available all the year than it can also be made with canned or frozen corn too. If you use canned corn than you must to strain the corn and dry off the corn on paper towels as much as possible.

I f you using frozen corn it needs to be set at room temperature to melt. To defrost, you can add small amount of water into a bowl and microwave it for a couple minutes or place the corn in a strainer and run water thoroughly over the corn until defrosted. Again, use a paper towel to dry off the corn as much as possible before making the fritters.

These corn fritters can be freeze for up to two months. Just to place them in a single layer in a resealable plastic bag or an airtight container. Also, the batter for the fritters can be stored in the fridge for up to 4 hours before you plan to use it. While serving, heat oil in a pan to fry the frozen fritters until crispy and warmed through on both sides.

These fritters are the absolute best way to enjoy fresh corn – they’re light, crispy and flavorsome!

Corn Fritters

Serves: 16

Ingredients

  • 3 cups fresh or frozen corn kernels
  • 1 cup all-purpose flour (maida)
  • 2 large eggs, lightly beaten
  • 3/4 cup thick or heavy cream
  • 1 Tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil to fry
  • Scallions (spring onion) sliced for serving
  • Sour cream or garlic sauce for serving

Instructions

  1. Add the corn kernels, flour, sugar, baking powder, salt and black pepper in a large bowl. Stir all to combine well.
  2. Add eggs and heavy or thick cream until a thick batter forms.
  3. Heat a small amount of oil in a deep pan over medium-high flame. We just need to coat the bottom of the pan.
  4. Place 2-3 tablespoon mounds of the fritter batter into the pan, then flatten them into a flat, circular shape.
  5. Cook the fritters for 2-3 minutes per side, or until they’re golden brown and crispy.
  6. Transfer the fritters on a lined paper towel to absorb any extra oil. Repeat the process with the remaining batter.
  7. You may sprinkle extra salt and pepper on it if you want.
  8. Serve the fritters warm. They are excellent with scallions or with a little sour cream or garlic aioli for dipping.

Tip :

  • You can use fresh or frozen corn kernels to make corn fritters. If you are using fresh corn kernels than the sweet and slightly crisp flavor makes these fritters extremely tasty.
  • I love to serve these fritters simply with a side of sour cream/garlic sauce or with sliced onion. For more savory accompaniment, place some salt and pepper.
