Like some nuts have more natural oils than others such as peanuts and cashews have more natural oils (fatty acids) so they turn into butter quite easily, whereas almonds have a bit less oil. Almond butter is much healthier because it contains vitamins, minerals, and fiber.

Process

Using a food processor or blender, you can get a very smooth and creamy almond butter by just following few simple steps. This is a perfect protein source usually spread on sandwiches, snacks and other baked goods. All you need to do first roast them in a oven. It helps to blend them easily when they are roasted. The heated almonds gives a sweet and nutty aroma to the spread. After roasted than put all of them to a food processor and grind them in stages until they turn into a creamy butter texture or a paste forms.

Store

This must have a fluid consistency right after processing because the heat generated when grinding them, so will make it easy to transfer to an airtight container or jar. Place the almond butter to room temperature or keep it in the refrigerator will create it more of a viscous yet spreadable consistency.
You can store well in the refrigerator for up to 1 week. Take out a few minutes before using if spreading on sandwiches.

Ingredients

  • 2 cups around 300 grams unsalted roasted almonds
  • ½ teaspoon kosher salt
  • 1 tablespoon 15 ml coconut oil

Instructions

  1. Pre-heat the oven at 325 ° F (163 ° F) before roasting the almonds.
  2. Place the almonds evenly on a parchment baking tray and roast for 8 minutes, rotate the tray of almonds and bake again for 5 minutes.
  3. Pour warm almonds with salt into a food processor or blender jar.
  4. Grind them for 1 minute at high speed, by doing this the almonds turn roughly grinded. Shake the jar upside down and grind again for 1 minute. Now you will see that almonds are getting more granular than before.
  5. You need to re-process for 1 minute until the almond mixture is formed into a paste.
  6. Then add coconut oil and process it for 1 minute at high speed.
  7. Stir the sides and process well until it becomes smooth and creamy. Repeat this process over and over.
  8. Taste it and add more salt if needed.
  9. Almond butter will be slightly thinner in texture and thickened as it cools to room temperature.
  10. Remove or transfer this almond butter into an airtight container and keep it in a refrigerator or a cool and dry place.
