Description
Paneer paratha is a healthy Indian cottage cheese stuffed flatbread/paratha recipe, a great protein packed meal for breakfast, lunch or dinner. Served with butter, yogurt, masala chai or any, pickle.
Ingredients
For the dough
- 1 cup whole wheat flour (atta)
- Salt as needed
- Water as required
For the stuffing
- 1 cup fresh paneer (cottage cheese) grated
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 tablespoon mango powder
- 1 teaspoon carom seeds (ajwain)
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds powder
- 1 tablespoon mint leaves finely chopped
- 1 tablespoon green chili finely chopped
- 1 tablespoon coriander leaves finely chopped
- 1 tablespoon ginger chopped
- Salt to taste
- Ghee or oil for roasting
Instructions
For the dough
- Take whole wheat flour and salt in a mixing bowl.
- Add water slowly and start kneading to make a non-sticky dough.
- Apply a little oil and knead again.
- Cover and keep aside for 5 – 6 minutes to set.
For the stuffing
- Combine all ingredients together in a mixing bowl like grated paneer, mint leaves, green chilies, fresh coriander, ginger, red chili powder, turmeric, mango powder, crushed carom seeds, jeera powder, garam masala and salt to taste.
- Now, mix all the ingredients well and your stuffing is ready.
How to make paneer paratha
- Divide the dough into equal portion.
- Roll each portion with a rolling pin to make a circle about 3 inch diameter. Keep the edges thin and the center portion thick.
- Place the paneer filling at the centre of the rolled dough.
- Lift the edges one by one, so that all the stuffing should be inside the paratha. Pinch to the center and seal properly to make a roundish ball once again.
- Dust some flour on it and then roll out the dough to a diameter circle of around six inch flatbread just like roti.
- Heat a tawa on medium flame. As the tawa turns hot, transfer the rolled paratha over it and let it cook.
- Once it is cooked from one side, flip it after 40-50 seconds.
- Cook the paratha for 1-2 mins until brown spots start appearing on both the sides and the paratha is evenly cooked.
- Apply some ghee or oil and smear it all over.
- Flip the paratha till it is crisp and golden in colour.
- Repeat with the remaining dough balls and make all parathas similarly.
- Your paneer paratha is ready.
- Serve the paratha hot with a big spoon of butter, yogurt or any pickle.

Notes
- For best results, you can use fresh homemade paneer.
- Make sure paneer should not be watery, when you stuff the paratha with paneer. It will spoil the texture and shape of the paratha.
- Always use grated paneer for the recipe, otherwise some lumps may present while crumbled it. This may break down the paratha while rolling.
- To make a slightly soft dough, knead it for 6 to 7 minutes.
- Additionally, you can add chopped onion into the filling if you like.
