Batata vada pav is a most popular Mumbai street food snack recipe made with potatoes. In marathi language ‘potatoes’ are called as ‘batata’ and ‘vada’ means a ‘fried snack’ whereas in south India, batata vada is known as Potato bonda and in maharashtra this snack is called batata vada. In short Batata vada is made by deep frying boiled, spiced and mashed potatoes balls coated in gram flour batter and then deep fried. This recipe is quite simple and best to make for a evening snack or when you have guests at home. It is also a great party snack or an appetizer. This is the same batata vada that we use in the Vada pav. It is mostly served with green chutney or even tomato ketchup are best enjoyed when they are served hot. In this recipe, I have stuffed these vadas between buns or pav.
So, here is how to make this batata vada at home.

- 6 medium Potatoes boiled & peeled
- 2 cups Gram Flour
- 2 tablespoons Oil + to deep fry
- 10-12 Curry leaves
- 1 tablespoon crushed garlic
- 1 teaspoon grated ginger
- 3 green chillies
- ¼ teaspoon Turmeric powder
- Salt to taste
- A few sprigs fresh coriander leaves
- 1 ½ teaspoons red chilli powder
- 1 teaspoon baking soda (soda bicarbonate)
- 12 Pavs
Instructions
To make Vada stuffing
- Boil and peel the potatoes. Mash them very well and put into a bowl.
- Heat 2 tablespoons oil in a non-stick pan. Add curry leaves, crushed garlic to the pan and saute. Add ginger and saute. Add finely chop green chillies along with turmeric powder and potatoes and mix well. Add salt and mix well. Transfer into a bowl and let it cool.
- When it cools, add finely chop coriander leaves into the mixture. Then make medium sized balls from the potato mixture. Slightly flatten the potato balls as it helps to fry the vadas easily. Keep aside.
To Make batter
- In another bowl, take gram flour, add ½ tsp red chilli powder, salt and soda bicarbonate and mix well. Add sufficient water and whisk to make a smooth thick batter. If the batter looks thin, then you can add some more besan.
To fry Batata Vada
- Heat oil for deep frying in a kadai. keep the flame to medium.
- When the oil becomes hot, take a potato vada and dip it in the gram flour batter. Gently coat it with the batter evenly all over. Then gently place the vadas in hot oil. Deep fry till golden. Drain on kitchen paper towels. Remove fried batata vada with a slotted spoon.
- Gently split open the pavs without cutting through, apply a little chutney on the inside, place a wada and arrange on a serving plate. Serve hot.
