This recipe is a great way to use any kind of leftover bread, that we always look forward to reusing whenever we have some extra bread in the refrigerator. This is one of my favorite breakfast recipes since it is ready in no time.
What is Upma?
Upma is the most popular dish in South India. It is a savory thick porridge-like meal that’s prepared with dry roasted semolina/rava or coarse rice flour, some veggies, and spices. The several variants of the Upma are popular across India.
Bread upma is one such variant, can be ready in 10 minutes. It is another popular South Indian style breakfast recipe that can serve as an evening snack or can be packed in a kid’s lunch box.
About this recipe
Bread upma is a quick, easy, and super flavorful South Indian Upma variation prepared with bread cubes, onions, tomatoes, spices, and herbs. The traditional upma uses semolina while this dish uses bread.
It is a great way to use the leftover bread whenever you have some extra bread in the refrigerator.
Ingredients –
To make bread upma, you just need,
Bread – Use fresh bread or the leftover stale bread, both work well in this recipe.
I used white sandwich bread, but you can use multigrain bread, brown bread, whole wheat bread. If the bread edges are hard, I suggest cut the edges of the bread.
Vegetables – You can use a variety of veggies but I like to keep it simple and thus I have added only onion, tomato, and green chili. You can also add peas, carrot, capsicum, and beans to make it more nutritious.
You can add the number of green chilies according to the taste. For kids, you should avoid them adding it too.
Oil – You can use any vegetable oil to make this simple breakfast recipe. You can even use butter or ghee for a richer taste.
Other Ingredients – You also need curry leaves, mustard seeds, urad-chana dal, salt, and spices such as kashmiri red chilli powder and to garnish chopped coriander leaves and bikaneri sev on top.
Serving Suggestions
Tastes best when served hot, but I can say it tastes even good when cooled down. It can be served on its own or along with a cup of masala chai or filter coffee.
You can also serve tomato ketchup or with mint coriander chutney on the side.

Ingredients
- 7–8 bread slices white or whole wheat)
- 2 tablespoons oil
- ½ teaspoon mustard seeds
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 10–12 curry leaves
- 1 green chilli finely chopped
- 1 teaspoon kashmiri red chili powder
- Salt to taste
- 1 teaspoon tomato ketchup
- 3 tablespoons coriander leaves (finely chopped)
- Sev for garnishing (optional)
Instructions
To prepare bread upma
- First, cut the bread slices into cubes and keep them aside.
- Next chop the onion, tomato, green chilli and set aside.
- Now heat oil in a pan on medium flame, add mustard seeds.
- Fry it till crackles.
- Add urad-chana dal along with curry leaves.
- Let them crackle for a minute until the curry leaves turn crisp and dal turn change in color.
- Add chopped green chilli and fry it for about 10-12 seconds.
- Then add chopped onions and fry for 2 to 3 minutes until they turn translucent.
- Add kashmiri red chili powder and salt to taste.
- Mix very well and saute the mixture for another 30 seconds on low flame.
- Add tomatoes. Cook until they turn soft and mushy.
- Further, add tomato ketchup and mix the mixture well.
- Finally, add bread cubes and mix gently without breaking the bread cubes.
- Cover and let it cook for 2-3 minutes on low flame. Make sure all the bread pieces absorb the masala.
- Garnish it with some chopped coriander and sev on top while serving.
- Bread upma is ready.
Notes
- Leftover bread or fresh bread both works well in the recipe. For a healthier version, you can use whole wheat bread, multigrain bread, or ragi bread (finger millet bread).
- It is best to toast the bread before making the bread upma. You can toast them on tawa or in a toaster until golden brown and crisp. It adds crispiness to bread upma.
- Instead of oil, you can use butter or ghee, which gives a more rich flavor in this Bread Upma recipe.
- Additionally, you can also add vegetables like carrot, capsicum, peas, and beans to make it more nutritious.
- Alternatively, you can add garam masala, maggi masala, or pav bhaji masala for more flavors.
