Salt and pepper are essential for flavouring, but you can also add other spices or herbs according to your preference.       The traditional cooking method for potato pancakes is frying. Heat a generous amount of oil in a skillet over medium heat and spoon the potato mixture into the hot oil, forming small pancakes. Flatten them slightly with the back of a spoon or a spatula to ensure even cooking. Fry the pancakes for a few minutes on each side until they turn golden brown and crispy. However, if you prefer a healthier option, you can also bake the pancakes in the oven on a greased baking sheet.

      Sweet Potato Pancakes: Replace some or all of the regular potatoes with grated sweet potatoes for a slightly sweeter and earthier flavour.

      Veggie Pancakes: Add grated vegetables like carrots, zucchini, or spinach to the potato mixture for added nutrition and flavour.

      Herbs and Spices: Enhance the flavour of your potato pancakes by adding herbs and spices. Chopped fresh herbs like parsley, dill, or chives can be mixed into the batter for added freshness. Spices like paprika, garlic powder, or cumin can also be added to create different flavour.

      Potato Pancakes are one of  my favourite savoury treats, crisp from outside and fluffy from inside made with grated potato, gram flour and few spices. So here’s a potato pancake recipe that doesn’t take much time to make. Serve them for breakfast or enjoy as a snack on weekends.

      Ingredients

      • 3 large potatoes, peeled & grated
      • 1 teaspoon cumin seeds
      • 1 small onion, finely chopped
      • 1 fresh red chilli, finely chopped
      • ½ teaspoon black pepper powder
      • 2 tablespoons corn flour
      • 2 tablespoons gram flour (besan)
      • Salt to taste
      • Oil for pan frying

      Instructions

      Preparation

      • First, wash, peel and grate the potatoes in a mixing bowl with enough water. Soak the potatoes in water for 5 minutes.
      • Then drain the water and wash it once. Squeeze out the excess water by pressing them with your palm.

      How to make Pancakes

      • Take washed grated potatoes in a mixing bowl along with cumin seeds. Black pepper powder, green chilli, corn flour, besan, onion and salt to taste. 
      • Combine everything well to form a pancake mixture.
      • Heat the pan. Add oil and put 1 scoop of the mixture.
      • Spread it slightly to form a flat patty of medium thickness.
      • Roast for about 2-3 minutes from both the sides until crisp and golden brown in colour.
      • Once roasted, transfer the pancakes on a kitchen paper towel, to remove the excess oil.
      • Similarly prepare the remaining pancakes.
      • Serve the pancakes hot with green chutney, tea or coffee.

      Notes

      • Squeeze the potato well from water using a muslin cloth or on a metal sieve, else you need to end up adding more besan to this recipe.
      • Spread the pancake mixture with your hands. It is the easiest way to form small disks. If  you feel that the potato mixture is sticking, wet your hands slightly then shape the patties.
      • For frying them, you can use clarified butter or ghee is best for a rich and delicious buttery pancake. 
      • Additionally, add grated cheese to make it flavourful for your kids.
