Veg Chowmein, a dish made from noodles with mixed vegetables and flavored to Chinese sauces. The word “Chow’ means stir-fried and ‘mein’ means ‘noodles’.

- 1 cup Noodles cooked (as per instructions on pkt)
- ½ cup Fresh vegetable stock
- ½ cup French beans (Farsi) chopped in small pieces
- 1 cup Moong bean (sprouts) (soaked overnight) optional
- 1 Carrot (Gajar) thinly sliced
- ½ cup Coriander leaves (Dhaniya) finely chopped
- 1 Onion (Pyaaz) finely long sliced
- 2 stalks Celery / spring onions (Hara pyaaz) cut in small pieces
- 1 inch piece Ginger (Adrak) thinly sliced
- 3 Garlic cloves (Lehsun) finely chopped
- 1 tbsp Dark soya sauce
- 1 tbsp Light soya sauce
- Salt to taste
- 1 tbsp Sugar
- 2 tbsp Oil
Instructions
- First boil the noodles for 4-5 minutes or as per the package instruction. Add 1 tsp of salt. Drain and rinse well with cold water. Place the noodles in a tray and toss with 1 tbsp of oil.
- Second, heat a pan, add 2 tbsp of oil and stir-fry garlic, ginger and onion for 2 mins on high flame.
- Then add all the veggies celery, carrot, beans and continue to stir-fry for 5 mins until golden brown.
- Mix well and continue cooking for 2-3 minutes.
- Now add salt to taste also add soya sauce (light & dark), ½ cup veg stock, moong bean (sprouts) and mix well.
- Add boiled noodles and toss everything together till noodles is coated with mixture well
- While serving noodles remain in the bottom while the vegetables and sauce mixture is on top.
