This healthy beetroot salad recipe looks fancy and it is so easy to make including carrot or cucumber full of great flavors and textures. It is also nutritious. The dressing of salad includes peanuts, lemon juice and coriander is so irresistible. It is a one pot meal or you can take it as a side dish with grains, breads etc.

Beets and carrots can easily available in winters that adds vibrant color and fresh flavor into your healthy diet. Though these are usually consumed as root vegetables, beet and carrot are highly nutritious. Both are available in a range of colors from golden yellow to deep purple and provide abundant health benefits.

How Beetroot helpful ?

Beetroot is the most effective vegetable to cure anemia disease. It contains sufficient amount of iron, vitamins and minerals, which helps to increase and cleanse the blood. Womens found mostly with high blood loss problems, so they should definitely add beetroot in their diet.
Beets contain also significant amount of fiber, flavonoids and betacyanin. These nutrients help in reducing cholesterol.
It is also very beneficial for those people who do a lot of workouts in the gym and get tired after working all day. Beet increases the energy level in your body. In addition, the nitrate present in it helps to expand the arteries, which helps in lowering blood sugar levels.
Beet contains plenty of nitrates, which are helpful in widening our arteries and reducing blood pressure.
Beetroot contains fiber, so it works as a medicine to relieve constipation. Add beetroot into your diet also helps to digest food quickly. Beet has fewer calories and is more anti-oxidant and fiber. With its regular intake, you can lose weight easily.

How carrot helpful ?

Carrots are high in beta carotene, which has been linked to a reduced risk of several cancers

Carrots, like many veggies, are a good source of fiber which aids the digestive system and helps you become more regular!

Rich in vitamin A, carrots can help improve your eyesight.

Vitamin A isn’t the only vitamin they’re rich in, though. Carrots are also a good source of vitamin C, vitamin K, vitamin B8, pantothenic acid, folate, potassium, iron, copper, and manganese. Carrots are good for your immune system! They contain a number of antiseptic and antibacterial abilities that make them ideal for boosting the immune system. Beetroot Salad Recipe

Serves: 4
Cooking time: 5 minutes
Level: Easy

Ingredients

  • 2 beetroots grated
  • 2 carrots grated
  • 1 cucumber chopped
  • 4 tablespoons peanuts roasted
  • 1 green chilli chopped
  • 4 tablespoon green coriander chopped
  • 1 tablespoon lime juice
  • 1 tablespoon black pepper powder
  • 1 tablespoon chat masala
  • Salt to taste

Instructions

  1. First peel and grate or shred the beetroots or carrots using a grater or food processor. Place the grated vegetables in a large bowl.
  2. Add the chopped cucumber along with roasted peanuts, green chilli, lemon juice into the bowl.
  3. Than add salt to taste, black pepper and chat masala.
  4. Sprinkle coriander and toss all together well, leaving some to garnish on top.
  5. Transfer on to a serving plate or bowl as a side dish.

Tips-

  • While peeling and grating beetroots, wear gloves to avoid stain in your hands.
  • Instead of a knife, use a vegetable peeler.
  • Alternatively, you can use food processor to grate beetroots and carrots.
  • Additionally, you can add some chopped walnuts to enhance the taste.
