If you are looking for a quick appetizer or perfect party snack then do try making these Avocado Egg Rolls at once.

A unique blend of colorful ingredients and delectable flavors filled with fresh avocado, mushroom, tomato, onion and tomato sweet & spicy sauce. It is super quick and the best rolls recipe ever!

This amazing recipe is so easy to make and extemely tasty. It is ready in 20 minutes. This Avocado Egg Roll is inspired by the Cheesecake Factory egg rolls. In-fact, I love of this healthier version because they are not fried but baked. It can be an exciting and healthy lunch box recipe for your kids also. These Egg Rolls are crispy from outside and packed with flavor of avocado mixture through inside. Also, You can use homemade wrappers for wrapping but to save time, you can bought spring roll wrappers or other sheets to roll them. Serve them hot with your favorite dipping sauce.

Description

An easy baked Avocado Rolls are super yum, delicious and healthier because they are not fried. These rolls are crispy and crunchy from outside and creamy and chewy through inside. Bake them in the oven at home any time you want to make. 


Ingredients

Scale

For the filling:

  • 1 garlic cloves minced 
  • ¼ cup chopped onion 
  • 1 cup sliced button mushrooms (optional) 
  • ½ avocado mashed 
  • 1 tomato finely chopped
  • Salt and black pepper as per taste
  • 1 teaspoon fresh lime juice 
  • 1 teaspoon tomato sweet and spicy sauce
  • 1 tablespoon olive oil or vegetable oil 

Other ingredients: 

  • 6 phyllo sheets (wrappers)
  • Flour and water slurry to seal

Instructions

  • First, preheat the oven to 180° C
  • Heat a pan or skillet. Add olive oil to medium high flame.
  • Stir fry minced garlic. Add chopped onion and sauté until it become translucent.
  • Now add sliced button mushroom. Stir well on high flame until cooked. Transfer the mixture to a bowl and let it cool completely.
  • In other bowl, add mashed avocado, tomato, salt, pepper and lemon juice as required.
  • Gently toss all-together. Then add the onion mushroom mixture along with tomato sweet & spicy sauce.
  • Take a phyllo sheet (wraps) and brush the edges with oil.
  • Take another phyllo sheet on top and brush with oil as well.
  • Now place final or third phyllo sheet on top.
  • Put the filling on the top of phyllo sheet, wrap it tightly and seal with flour and water slurry.
  • Set the prepared rolls on a baking tray, grease it with oil and bake at 180° C at-least for 8-10 minutes.  
  • Remove the baked roll from the oven onto a paper towel or lined plate. 
  • Cut diagonally and serve immediately with your favorite dipping sauce.

Notes

  • Make sure as you wrap these rolls then there shouldn’t be extra air remain. Roll them tightly in any shape you want.
  • If you don’t have phyllo sheets, you can replace these sheets with rotis.
  • Do not mix the mushroom mixture hot into the avocado mixture. Let the mixture cool before mixing.
  • Best to enjoy wit sprouts and any dry fruit of your choice or any dipping sauce.
  • Prep Time: 10 mins
  • Cook Time: 10 mins
