Shorshe Dharosh is a delicious Bengali recipe, prepared long ago in all Bengali vegetarian kitchen, made with okra with thick mustard sauce. This dish has a very strong aroma and sharp taste. A very simple and easy recipe because okra requires less time to cook. Ideal as a side dish either with rice or chapatti. In this dish, mustard gives a perfect touch and nigella seeds bring an additional flavor. It is a delicious vegetarian recipe good for health, the skin because of its high content of anti-oxidant. All the ingredients included here can be easily found at home.
There are various ways to prepare Bhindi but the principle is almost same for all . You can also add some chopped coriander leaves that add to the flavor. Here, I present this tasty Shorshe Dharosh recipe to you all.
Shorshe Dharosh (Bhindi Masala)

- 2 tbsp mustard seeds
- 1 tbsp posto/poppy seeds
- 1 tbsp yogurt
- 1 tbsp water
- 3 green chilies
- salt to taste
- Oil
- ½ tbsp kalonji (nigella seeds)
- 30 small dharosh (okra) head and tail cut
- Mustard oil (optional)
- Turmeric
- Sugar to taste (optional)
- Salt to taste
Instructions
- Wash the okra and then pat dry. Chop off the head and tail after drying.
- Heat oil in a frying pan. Add nigella seeds and green chili
- When the spices start ripening, sauté the okra with a sprinkle of turmeric at medium heat. Cover and sauté for about 4 minutes till okra is lightly but not fully cooked. Sprinkle salt and remove and keep aside.
- Soak mustard and poppy seeds in water for 20 minutes and then make a paste with all ingredients. The paste should be smooth. If more water is needed add a small quantity.
- Mix the mustard paste with yogurt and add the mixture to the okra
- Add a little sugar and mix nicely. Drizzle a tbsp. mustard oil and serve hot. Mix well okra is done
