Description

Pyaaj ka achaar is a tangy and spicy Indian condiment made with sliced baby onions, marinated in a blend of aromatic spices, salt and mustard oil. It is a quick and easy to prepare pickle recipe that enhances the taste of any meal.


Ingredients

  • 1 kg onions (small-sized), sliced

  • 1 tablespoon ground mustard seeds (सरसों)

  • Salt (as per taste)

  • ½ tablespoon turmeric powder (हल्दी)

  • 1 tablespoon red chili powder (लाल मिर्च) adjust according to your spice preference

  • 3 tablespoons mustard oil


Instructions

  • Wash small sized onions and peel off the skin.

  • Pat them dry on a kitchen towel and then use for this recipe.

  • Now slit onions into quarter.

  • In a mixing bowl, add the sliced onions, grinded mustard seeds, salt, turmeric, red chilli powder, and mustard oil.

  • Mix well to coat the onions evenly with the spices. 

  • Once the onions are mixed, transfer the pickle to a clean, dry glass jar or airtight container. 

  • Cover the jar or container tightly and keep the pickle under sunlight for 30 minutes and then rest it for 2 days at room temperature before consuming. 

  • This will allow the flavors to develop and the onions to pickle properly.

  • This homemade pyaaj ka achaar is ready to enjoy! 

  • Serve it as a side dish with your favorite Indian meals or use it as a condiment to add flavor to salads, sandwiches or wraps.

Notes

  • Use fresh, firm small sized onions for the best results. For this pickle, red onions are commonly used due to their slightly sweeter flavor, but you can also use white or yellow onions.
  • Slice the onions evenly for uniform pickling and texture. 
  • Adjust spice levels according to your taste preference. If you prefer a milder pickle, reduce the amount of red chili powder. Conversely, if you like it spicier, add more chili powder.
  • Pyaaj ka achaar is made with mustard oil, which adds a distinct flavor. If you prefer, you can use any other cooking oil, but mustard oil is recommended for the best results.
  • Allow the pickle to rest for at least 2 days before consuming. This will ensure a tastier pickle.
  • Store the pickle in a clean, dry glass jar or airtight container. 
  • Feel free to experiment with additional ingredients like garlic, ginger, or spices such as fenugreek seeds or nigella seeds to customize the pickle to your taste.
