Description

Khubani (Apricot) Chuski is a refreshing frozen treat, originating from the Indian subcontinent. This delightful frozen treat combines the traditional appeal of a snow popsicle with the juicy, tangy flavors of khubani (apricot). The rich and velvety chuski captures the essence of apricot in every bite, making it perfect for indulging your sweet tooth. Here’s a simple recipe to create this refreshing dessert at home:


Ingredients

Scale
  • 2 cups (about 300g) fresh apricots, khubani, deseeded
  • 125 ml sugar syrup (to taste)
  • Black salt to taste
  • ½ teaspoon red chilli
  • ½ teaspoon roasted cumin (jeera) powder
  • ½ teaspoon chaat masala

Instructions

  • Wash and deseed the apricots.
  • Blend the apricots with sugar water until smooth.
  • Transfer the puree into a bowl.
  • Add black salt, red chilli, and some chaat masala.
  • Mix well.
  • Pour the mixture into small paper cups or popsicle molds.
  • Cover with aluminum foil, and insert an ice cream or wooden stick into the center of each cup.
  • Freeze for several hours or until it becomes solid.
  • Demould the chuski, sprinkle some chaat masala, a pinch of red chilli and squeeze lemon juice, 
  • Serve the khubani chuski chilled.
  • Enjoy this sweet and tangy treat on a hot day!

Notes

  • Select ripe and juicy apricots, khubani for the best flavor. Ripe apricots are naturally sweet and will enhance the taste of your chuski well.
  • If using dried apricots, soak them in warm water for a few hours or overnight. This will soften them and make them easier to blend.
  • Adjust the spice level according to your preference.
  • Apricots can be quite sweet on their own. Taste the mixture before freezing. Adjust the sweetness by adding honey, sugar, or any sweetener you like.
  • A splash of lemon juice balances the sweetness and adds a refreshing tang to the chuski.
  • Once frozen, demold the chuski and serve them chilled. The texture should be icy and refreshing.
  • Additionally, you can garnish with chopped nuts or mint leaves.
