For the Misal

  • Sprouted moth beans (matki) – The protein-rich heart of the dish; soft yet holds its shape.
  • Frozen green peas – A handy shortcut that adds sweetness and extra texture.
  • Oil – For cooking the masala base.
  • Cumin seeds – Gives the tempering its warm, nutty start.
  • Onions – Adds sweetness and body to the curry.
  • Ginger-garlic paste – Brings aroma and depth of flavour.
  • Green chilli – Fresh, gentle heat.
  • Red chilli powder – Gives the misal its fiery red colour and famous Kolhapuri kick.
  • Turmeric powder – Adds colour and warmth.
  • Coriander powder – Earthy flavour that rounds off the spices.
  • Garam masala – The finishing spice blend for that final aroma.
  • Fresh coriander – Adds freshness at the end.
  • Lemon juice – Gives the tangy punch that balances the spice.
  • Salt – To taste.

Description

Craving a spicy and comforting Maharashtrian breakfast? Try this Quick & Easy Kolhapuri Misal Pav made with sprouted moth beans and frozen green peas. It is spicy, tangy, flavorful, and easy to make at home. Serve the hot misal with crunchy namkeen, fresh coriander, lemon wedges, and buttery pav for a delicious meal.


Ingredients

Scale

For the Misal

  • 1 cup sprouted moth beans
  • 1 cup frozen green peas
  • 2–3 tbsp oil
  • 1 tsp cumin seeds
  • 2 small onions, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1–2 green chilli, finely chopped
  • 1 tsp red chilli powder
  • 1 tsp kashmiri red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • Salt toa taste
  • 1 tsp garam masala
  • 2 tbsp finely chopped fresh coriander
  • ½ lemon, juiced
  • 2 cups water

For Serving

  • 2 pav or as required
  • Crunchy namkeen mixture
  • Fresh coriander
  • Lemon wedges
  • Butter, as required

Instructions

  • Add the sprouted moth beans to a pressure cooker with a little salt and about 1.5 cups water. Pressure cook for 2 whistles on medium heat. Allow the pressure to release naturally, then strain and keep the cooked moth aside.
  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add the finely chopped onions and sauté until they become lightly golden.
  • Add ginger-garlic paste and chopped green chilli. Sauté for 1–2 minutes, until the raw smell disappears.
  • Add red chilli powder, kashmiri chilli powder, turmeric powder, coriander powder, salt and garam masala. Mix well and cook the spices for a few seconds. Add a small splash of water if the masala starts sticking to the pan.
  • Add the cooked sprouted moth and frozen green peas. Mix everything well so the moth and peas are coated with the masala.
  • Add about 1.5 cups water and salt to taste. Cover and cook for 5–7 minutes, or until the green peas are soft and cooked through. The misal should have a slightly thin, flowing curry-like consistency. Add a little more water if required.
  • Add finely chopped fresh coriander and lemon juice. Mix well and turn off the heat.
  • Pour the hot misal into serving bowls. Top generously with chopped onion, crunchy namkeen mixture and fresh coriander. 
  • Serve with lemon wedges and warm, buttery pav on the side.

Notes

  • Use freshly sprouted moth beans for the best texture and flavor.
  • Do not overcook the moth; it should remain soft but hold its shape.
  • For a thinner misal, add a little extra hot water while cooking.
  • Adjust the red chilli powder according to your preferred spice level.
  • Adding a splash of water while roasting the spices prevents them from burning.
  • Add lemon juice only at the end for a fresh, tangy flavor.
  • Add the namkeen just before eating so it stays crunchy.
  • Toast the pav with butter for an extra delicious serving.
