Simple, refreshing, and flavorful, this Garlic Lemon Coriander Soup is the perfect winter comfort bowl. Made with simple ingredients like garlic, ginger, green chillies, and fresh coriander, it’s ready in just 10 minutes. Enjoy it on its own or pair it with hot momos for a cozy, soothing meal, perfect for chilly days.


Ingredients

  • 1 tbsp oil
  • 1 tbsp finely chopped garlic
  • 1 tsp finely chopped ginger
  • 1–2 green chillies, finely chopped
  • 2 tbsp fresh coriander leaves, chopped (plus extra for garnish)
  • 3–4 cups water or vegetable stock
  • Salt to taste
  • ½ tsp black pepper powder
  • Juice of 1 lemon

Instructions

  • Heat oil in a pan over medium heat.
  • Add garlic, ginger, green chillies, and coriander leaves.
  • Sauté for 2–3 minutes until aromatic.
  • Add water or vegetable stock and bring it to a boil.
  • Season with salt and black pepper.
  • Switch off the flame, add lemon juice and fresh coriander.
  • Mix well and serve hot.

Notes

  • Use vegetable stock instead of water for extra flavour.
  • Always add lemon juice after switching off the flame to retain its fresh, tangy taste.
  • Adjust green chillies according to your preference.
  • Add extra fresh coriander for a burst of freshness.
  • You can add a pinch of turmeric for added warmth and colour.
