Kulfi/ice creams are everyone’s favorite Indian dessert especially, during summer days. Personally, I love having Kulfi because it reminds me of my childhood memories of my school days. My love for Kulfi is never ended up here. I have always enjoyed the homemade Kulfis more than the outside ones. This easy kulfi recipe is surely going to hit your family and friends in the scorching summers because as it is chilled and has a super creamy consistency with crunchy nuts and is flavored with saffron & cardamom.

Kulfi comes in so many different flavors, but today I have shared a very simple recipe of Kesar Pista Kulfi made with milk, sugar, saffron, cardamoms, and pistachios. You can make it very easily at home. Trust me, this recipe is much tastier and healthier than the outside ones.

It gives really amazing tastes with something sweet, icy cold, creamy, or with bits of crunch that you have ever tasted!!

About This Recipe    

Kulfi is a frozen dairy dessert, similar to Ice-cream in terms of appearance however its method and its preparation it differs from an ice-cream in terms of density, creaminess and taste.

Kulfi is prepared by using a slow cooking method for long hours until it becomes thicker and much creamier consistency or its volume has not reduced by half, and then freeze in small clay pot (Matki). Therefore, it is rather dense as compared to regular ice-creams.

Nowadays, aluminum or stainless steel, or plastic molds are widely used instead of clay pot and served like an ice cream.

This kulfi recipe is quite easy to make with available ingredients at home but sure tastes delicious. Kulfi can be of different flavors such as Malai Kulfi, Pista Kulfi, Kesar Pista, Mango, Rose, Elaichi (Cardamom), almond, orange, and strawberry chocolaty etc.

Some people make kulfi using cornstarch or bread crumbs which gives a creamier consistency to the kulfi and some use Khoya/Mawa/Milk solids or even milk powder.

There are many new varieties of kulfi recipes available that come in various flavors like mango, rose, cardamon, saffron, , pistachio, .

Ingredients

This homemade kulfi recipe requires only 2 main ingredients like full cream milk and sugar.

For flavoring, I have used cardamom powder, saffron strands, and pistachios for some crunch.

Milk–  It is best to use full-fat or full cream milk.  It makes kulfi creamier, whereas low-fat milk or skim milk will not give you the best results.

Sugar – According to your taste and preference, adjust the amount of sugar.

Saffron – It is known as Kesar in Hindi. Kesar adds a nice flavor and gives kulfi a slight yellow color.

Cardamom Powder– It adds a beautiful flavor, aroma, and gives a rich and royal touch.

Pistachios – This Kulfi recipe is flavored with pistachios. It adds a nice crunch with every bite of the Kulfi.

Alternatively, you can also add other chopped dry nuts like Almonds, Cashews, etc.

Serving Suggestions

This is such a simple but awesome Kulfi recipe. I love serving this kulfi garnished with chopped nuts. It is perfect for summer parties, or any occasion.

Kulfi/ice creams everyone’s favorite Indian dessert is quite easy to make, made with milk, sugar, saffron, cardamoms, and pistachios. This easy kulfi recipe is surely going to impress your family and friends because of its super easy, creamy, and delicious in flavor. Here is how to make Kesar Pista Kulfi Recipe.


Ingredients

Scale
  • 1 litre full fat milk
  • 60 grams sugar
  • ½ teaspoon cardamom powder (optional)
  • 15 Saffron strands
  • A handful of pistachios

Equipment

  • Heavy bottom pan
  • Kulfi mould

Instructions

Making Kesar Pista Kulfi

  • In a heavy bottom pan, heat milk.
  • Bring it to a boil until it reduces to half.
  • Keep stirring in between.
  • Add sugar and saffron simmer for 4-5 minutes more. 
  • Once the milk is reduced to its 1/3rd consistency, remove it from the heat.
  • Let the milk mixture cool completely.
  • Once cooled, grind it to make it smooth.
  • Add cardamom powder, and chopped pistachios.
  • Mix well everything together.
  • Pour this mixture into the kulfi molds.
  • Put it into the freezer till firm.
  • Now insert an ice cream stick once it is half frozen. This may take 4-8 hours to freeze completely.

Unmolding Kulfi

  • To unmold the kulfi, remove it from the freezer.
  • Dip in a bowl enough of water for 30-40 seconds or alternatively, you can rub it between your hands.
  • Then the kulfi would come out from the mold easily.
  • Remove and serve frozen.
  • Enjoy.

Notes

  • Use full-fat milk to make kulfi for the best results.
  • Always use a heavy bottom pan or wok. Make sure, continuously stirring in between, otherwise, milk will stick to the bottom of the pan.
  • Remember; insert slowly a ice cream stick only when the kulfi is half set.
  • Additionally, you can garnish few pistachios or chopped nuts over the kulfi.
  • Prep Time: 5 mins
  • Cook Time: 45 mins.
