Shukto is a traditional Bengali dish made of mixed vegetables cooked in milk, mustard and poppy seeds gravy.  This recipe requires many Indian vegetables but bitter gourd (karela) is most important among all ingredients. Shukto is served at festivals and special occasions like  Durga Puja, Bengali’s marriage feast, baby shower or rice ceremony.

This recipe is basically a little bitter and sweet taste Bengali mixed vegetable curry served with puri, white rice and ghee. This delightful recipe is appreciated by people of all ages. It is made from bitter gourd, along with raw banana, potatoes, carrot and peas , milk, spices or even a few more vegetables can be added to this Bengali dish, i.e, raddish, ridge gourd, etc. This adds taste and an unique aroma to this recipe. Shukto is really healthy recipe, full of vitamins because so many vegetables are used in this recipe.

Shukto Recipe Bengali Mixed Veg

Ingredients

  • 2 karela (Bittergourd) – diced small
  • 2 Medium Size aloo (Potatoes) – diced small
  • 1 Medium baingan(Eggplant) - cut in small cubes
  • 1kela(Plantain) - cut in small cubes
  • 1 tori - cut in small cubes
  • 1gajar(Carrot)–boiled, cut in small cubes
  • 1 tamatar(Tomato) - chopped
  • 1/2 cup matar(Peas) - boiled
  • 2 tbspoon khuskhus (poppy seeds)
  • 1tspoon rai(Mustard seeds)
  • 1tsp adrak(Ginger)- chopped
  • 2 green Chillis - chopped
  • 3 tbspoon Milk
  • 1/4 tspoon Turmeric
  • 1/4 tspoon Sugar
  • Salt to taste
  • 1/2tbsp Oil

Instructions

  1. In a pan, saute the bitter gourd, eggplant (baigan) and potatoes separately.
  2. Soak the poppy seeds and 1/2 tsp. mustard seeds in warm water for an hour than dry it, make a smooth paste of khuskhus, green chilli, mustard and ginger.
  3. Heat oil in a pan, add mustard seeds and green chillis.
  4. Add vegetables one by one. Mix it all together, close the lid and let it steam.
  5. Leave it for 10 minutes, add half of the paste into it, turmeric and salt.
  6. Add 1/4 cup water if it is too dry.
  7. Cook on medium low flame for another 10-15 minutes.
  8. Add the rest of the paste, sugar and milk and let it cook for 5 minutes.
