Coffee is one of the most favorite drink all over the world. The most traditional Indian style coffee is Filter coffee, very common and popular drink in most of the South Indian households. Filter coffee is also known by various names – Kaapi, Kumbakonam Degree Coffee, Mylapore Filter Coffee, Madras Kaapi and so on. A strong, sweet, and frothy milky coffee decoction, made using a stainless steel coffee filter. Traditionally, this aromatic coffee is then served in a small steel tumbler and dabarah (container/cup). There are countless number of coffee versions are available like Mocha, Latte Frappe, Espresso etc. The taste of the coffee can vary, depending upon coffee powder which has been used. 

Coffee filter comes in different sizes and is now available on all stores. It has two cylindrical cups, the top part has a pierced bottom and the lower part is used to collect the decoction. It has also a pressing disc and center handle to press the coffee powder. It tastes best when prepared with whole fat milk and fresh strong decoction.

A good cup of filter coffee keeps you refreshed throughout the day. This coffee needs to be served immediately as soon as it is made. You can have filter coffee to start your day or serve it after breakfast. 

Here’s how you make fresh brewed filter coffee in true South Indian style.

Description

South Indian filter coffee is a traditional Indian style coffee, made using a special coffee filter. Learn how you will make fresh filter coffee at home.


Ingredients

·         3 tablespoons coffee powder

·         1½ cup water

·         1 ½ cup milk

·         4 teaspoons sugar

Main equipment

·         Stainless Steel Coffee Filter


Instructions

  • First take the coffee filter. Add coffee powder into the top pierced cup of the coffee filter and gently spread the coffee powder with a small spoon.
  • Now press the disk and a lid.
  • Boil water in a pot and slowly pour into the top cup and cover it with the lid. Wait for 20 minutes till the coffee decoction seep through into the lower compartment.
  • After 20 minutes, the decoction gets collected at the bottom of the cup.
  • Now take a tumbler set (traditional filter coffee set) and pour the desired quantity of decoction for an authentic feel.
  • Add 1 teaspoon of sugar into each cup or adjust sugar as per your sweetness.
  • Add hot boiling milk directly into the tumbler glass. Now pour the coffee from the dabarah back in the tumbler.
  • Repeat this process again for 2 to 3 times. Don’t do too much as then the coffee becomes cold.
  • Serve hot Filter coffee immediately as soon as it’s made.

Notes

  • You need very hot water and milk to make this filter coffee.
  • Also, adjust the amount of milk and coffee brew based on how strong or light you prefer.
  • Additionally, you can reuse the coffee powder to prepare a decoction twice; however, it will be light.
  • Finally, South Indian Filter Coffee taste great when prepared with thick milk.
  • Prep Time: 20 mins
  • Cook Time: 10 mins
  • Cuisine: South Indian
