Rava Appe, also known as Rava Paniyaram or Sooji Appe, is a popular South Indian snack or breakfast dish. It originated in the southern states of India, particularly in Tamil Nadu and Karnataka. It is a variation of the traditional Paniyaram, which is made using a fermented batter of rice and lentils.

About the Recipe:

Rava Appe is made using rava, which is also known as semolina or sooji. Rava is a coarsely ground wheat product that adds a delicious texture and crunch to the dish. The addition of curd (yogurt) and rice flour helps in fermenting the batter slightly, resulting in a soft and fluffy appe.

The process of making Rava Appe involves preparing a batter using rava, curd, rice flour, and various spices and vegetables. The batter is then poured into a special pan called an appe pan which has multiple small round moulds. The appe are cooked until they turn golden brown and crispy on the outside.

Rava Appe is a versatile dish that can be enjoyed as a snack, breakfast item, or even as a light meal. It is commonly served with coconut chutney, tomato chutney, or any other chutney of choice. Tips:

You can add finely chopped vegetables like capsicum, spinach, or grated cabbage for additional flavour and nutrition.

Adjust the consistency of the batter by adding water if it is too thick or curd if it is too thin.

Make sure to cook the appe on medium heat to ensure they are cooked evenly and don’t burn.

Grease the pan with oil before pouring the batter to prevent sticking and aid in easy flipping.

Variations:

For a spicy twist, you can add finely chopped green chilies, red chili powder, or black pepper to the batter.

To make it more nutritious, you can add grated paneer (Indian cottage cheese) or crumbled tofu to the batter.

You can experiment with different herbs and spices like curry leaves, asafoetida (hing), or roasted cumin powder to enhance the flavour of the appe.

Description

It can be enjoyed as a snack, breakfast item, or even as a light meal. It is commonly served with coconut chutney, tomato chutney, or any other chutney of choice. Here is the quick recipe:


Ingredients

Scale
  • 1 cup fine Rava (Semolina)
  • ½ cup Curd (Yogurt)
  • ¼ cup Rice flour
  • 1 small Onion, finely chopped
  • 1 small Carrot, grated
  • 2–3 Green Chilies, finely chopped
  • 1 tablespoon Ginger, grated
  • 2 tablespoons Coriander leaves, finely chopped
  • Salt to taste
  • ½ teaspoon Mustard seeds
  • ½ teaspoon Cumin seeds
  • ½ teaspoon Baking soda
  • Oil for greasing and cooking

Instructions

  • In a large mixing bowl, add rava, curd, and rice flour. Mix well and let it rest for 10-15 minutes.
  • In a small pan, heat a tablespoon of oil. Add mustard seeds and cumin seeds. Let them crackle.
  • Add chopped onions, grated carrot, green chilies, and grated ginger. Sauté until the onions turn translucent.
  • Add the sautéed mixture to the rava batter. Mix well to combine.
  • Add salt, chopped coriander leaves, and baking soda. Mix thoroughly to ensure all ingredients are evenly incorporated.
  • Heat an appe pan and grease the moulds with oil.
  • Pour a spoonful of batter into each mould, filling them about 3/4th full.
  • Cook on medium heat for a few minutes until the bottom side turns golden brown. Drizzle a few drops of oil on top of each appe.
  • Using a skewer or spoon, flip the appe and cook the other side until golden brown and crispy.
  • Remove the cooked appe from the pan and transfer it to a plate. Repeat the process with the remaining batter.
  • Serve hot with coconut chutney, tomato chutney, or any other chutney of your choice.
