Masala oats recipe or Veg Masala Oats is a healthy, tasty, savory oatmeal breakfast porridge cooked with lots of vegetables and aromatic Indian spices. An ideal breakfast recipe, for both kids and adults alike.

We often prefer the sweeter version of having oats with milk or yogurt by most, hence this Indian spiced masala oats recipe is to introduce some savory meal to your regular breakfast. This healthy spicy oatmeal is also known as savory veg oatmeal, vegetable masala oats porridge, oats upma, and spicy oats. So, it is a healthy & delicious vegan breakfast recipe made with steel-cut oats and wholesome veggies. A perfect meal to start the day and can be taken in lunch or even as an early dinner too.

In general, oats porridge or oatmeal is the most common recipe made with oats. Oatmeal is usually cooked with hot milk topped with chopped fresh fruits or dry fruits and nuts along with honey or sugar, whereas Masala Oats is so appetizing and relishing using vibrant veggies and spices.  In many homes, this is the typical morning breakfast. I love this oatmeal with the acompaniment plain yogurt very much.

If you ever tasted Indian Vegetable Khichdi, then you will surely like this savory superfood masala oats. If you are bored of consuming oats with milk then try this way of making oatmeal porridge spiced up with Indian masalas. The addition of vegetables and spices makes the simple oats porridge rich and flavorful. I would really suggest to try a different form of oats instead of having plain oats porridge with milk or yogurt.

Ingredients

I have used steel-cut oats in this recipe. But you can use any variety like quick cook or rolled oats. Just only the cooking time and water quantity can be varied.

Vegetables – You can use any vegetable that is easily available at your home. Adding veggies to masala oats is completely optional, but it will surely increase the taste and nutritional value of this recipe.  I have used carrot, beans, peas, bell pepper.

Spice powders – I added garam masala for flavor, red chilli powder, and turmeric powder for color. According to your preference, adjust the spice level.

Other ingredients like onion, tomato, green chilli, ginger, coriander leaves, and lemon juice.

Water- to cook the oats as needed.

Serving Suggestions

Masala Oats is fully spiced and needs nothing as an accompaniment.

If you like, you can enjoy these masala oats with a dollop of fresh yogurt and butter and pickle on the side, but it’s so good as itself.

Garnish with coriander leaves and roasted nuts.

Variations

Depending on your own choice, the texture can be varied. If you want the dry version then you can definitely reduce the water content and cook slowly. If you like thin consistency increase water quantity.

For a more spicy flavor, you can sprinkle crushed black pepper or pepper powder into the masala oats.

If you are making it for kids then skip the chilli and make it less spicy.

Also, you can add some mashed dal and make it like a khichdi as well.

Storage Suggestions

You can definitely store the leftover in the refrigerator once cool down completely. It stays good in the fridge for a couple of days.

Just reheat by adding a pinch of salt and little water to loosen up as you heat.

Masala oats recipe or Veg Masala Oats is a healthy, tasty, savory oatmeal breakfast porridge cooked with lots of vegetables and aromatic Indian spices. It is also known as savory veg oatmeal, vegetable masala oats porridge, oats upma, and spicy oats. A perfect meal to start the day and can be taken in lunch or even as an early dinner too. Here, I’m sharing how to make spiced oats recipe.


Ingredients

Scale
  • 1 cup steel-cut oats rinsed
  • 1 small onion finely chopped
  • 1 medium tomato finely chopped
  • 1 green chili finely chopped
  • 1 teaspoon ginger minced
  • 1 teaspoon cumin (jeera) seeds
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ½ teaspoon garam masala
  • 1 ½ cups mixed veggies (carrot, beans, peas, bell pepper)
  • 2 ½ cups water adjust to consistency
  • Salt to taste
  • 2 tablespoons coriander leaves to garnish
  • Half lemon juice
  •  

Instructions

  • In a pan, heat oil or ghee.
  • Once it’s hot, add cumin seeds, and let them splutter.
  • Then add green chilies, ginger, and continue to saute for a few seconds.
  • Now add onions and saute well until they turn light brown.
  • Next, add tomatoes and cook till they become soft and mushy.
  • Furthermore, add mixed veggies and saute for a minute or two until they cook and also they retain their crunchiness.
  • Then add spices like chili powder, turmeric powder, garam masala, and salt to taste.
  • Give it a quick stir on low flame till spices turn aromatic.
  • Add the steel-cut oats.
  • Mix everything well for a minute, so that oats can absorb the spices.
  • At this stage, add water.
  • Gently mix without mashing the oats.
  • Let the mixture come to a boil for 5 minutes, then reduce the heat and cover the pan till you get the desired consistency.
  • Add the lime juice. Mix well.
  • Remove from heat to the serving bowl and garnish with coriander leaves and chopped roasted cashews.
  • Serve healthy masala oats hot.

Notes

  • While making the oats, make sure to stir in between, else oats will stick to the bottom.
  • You can add vegetables of your choice or you can simply skip the veggies or you can make this simple using onion, tomato spiced oats recipe.
  • To make this more like Upma, add curry leaves and mustard seeds along with cumin seeds at the beginning.
  • Adjust the consistency of water before serving as masala oats get thickened once it’s cool down.
  • It can be stored in the refrigerator for up to 2 days, if you have leftovers savory oats porridge.
  • Additionally, you can add some roasted peanuts or nuts, seeds on the top to add the crunch.
