Potato toast is one of the yummy snack recipe, stuffed with mix veggies. This toast is a breakfast dish, perfect to eat whenever you feel hungry or you could eat it every day as well, especially when you are vegetarian, it is not easy for you to live in another country and you have very limited options to eat outside and you cannot always eat sandwiches filled with green vegetables and cheese. We need to make it something tasty and delicious. The solution is to always take something with you. I always like to have this potato toast whenever I go for a short trip or a day trip. Potato Toast is easy and tasty bread slice toast, which can be made from boiled potatoes, and mix vegetables as per your choice like capsicum, peas, onions etc.

Potato Toast is a delicious Indian recipe served as a snacks. The ingredients used to make these potato toast are easily available, quick to cook and good to taste.  Here I am making it by frying it, if you want, you can also cook it on a nonstick pan or in sandwich maker. I often boil extra potatoes so that I can easily make any potato recipe quickly. If you have some boiled potatoes left over in your fridge, so try this delicious toast.

Try this delicious toast, prepared by using boiled potatoes and mix vegetables.

Potato Toast

Serves: Serve with coriander chutney
Cooking time: 10 minutes
Level: Easy

Ingredients

  • 10 Bread slices
  • Oil to fry
  • For Topping- 4 Potato (boiled and mashed)
  • ½ cup mix vegetable (carrot, capsicum, peas, beans etc) boiled and finely chopped
  • 2 tbsp. Cornflour
  • 1 tsp. Ginger green chilli paste
  • Salt to taste
  • Chaat masala powder as per taste

Instructions

  1. First, mix the topping ingredients in a bowl.
  2. Now, spread the topping material on the bread slices with wet hands.
  3. Heat oil in the pan and fry them one by one until they turn golden.
  4. To remove excess oil, place on tissue paper.
  5. Serve hot with green chutney.

Note-   The oil must be well heated to fry the toast.
