Description
Aloo Beans is an Indian-style mildly spiced, healthy, and flavorful sabji made with potatoes and French beans or green beans. This recipe is a dry stir-fry recipe, can be made with minimum ingredients. It is tastes great with any Indian bread like Roti or Paratha. Vegan as well as gluten-free!
Ingredients
- 250 grams green beans (French beans) cut into 1 inch pieces
- 3 large potatoes, cut into square pieces
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- A pinch of asafetida (hing) optional
- ¼ teaspoon turmeric powder
- ½ teaspoon red chilli powder
- 1 teaspoon coriander powder
- 1 teaspoon amchur powder (dry mango powder)
- ½ teaspoon all spice mix (garam masala)
- Salt to taste
- 1–2 tablespoons chopped coriander leaves to garnish
Instructions
- In a pan or kadai, heat oil on medium heat.
- Once hot enough add cumin seeds and let them sizzle.
- Then add a pinch of asafoetida.
- Now add diced potatoes and saute them for about 3-4 minutes until they become slightly brown.
- Next, add chopped french beans along with spices like turmeric powder, red chilli powder, coriander powder, dry mango powder, salt to taste and mix well.
- Cover the pan with a lid and cook for about 10-15 minutes or until they are soft, tender, or cooked well. Stir once or twice in between cooking, so that it doesn’t stick to the bottom of the pan.
- Then sprinkle garam masala powder on top.
- Mix everything well and cook for 2 minutes.
- Finally, add chopped coriander leaves.
- Aloo beans recipe is ready to serve.
Notes
- Make sure, you use a heavy pan or kadai (wok) so that potatoes do not stick while frying.
- In this recipe, you can use any vegetable oil but I would recommend making this dish in mustard oil.
- You can also use ghee and even olive oil to make this recipe.
- To cook faster, cover your pan with a lid or plate. Add some water on the lid of the pan, so that the veggies don’t get burnt.
- According to your taste, increase or decrease the spice level.
